Whether you have small kids that like ice cream but don’t like putting it back in the freezer, or just have a forgetful memory yourself, there is nothing sadder than seeing a carton of ice cream that has obviously been sitting on the counter for far too long. Trying to re-freeze it won’t necessarily fix the problem, and most people will just resort to throwing it away. But don’t! You can actually make a cake out of this so-called disaster with just two more ingredients; a box of cake mix and eggs.

What is so great about this recipe is that you can totally customize the flavor the cake based on the box mix and even the ice cream flavor itself! Try different combinations like chocolate cake mix with peanut butter or cherry ice cream, or vanilla cake mix with pistachio or mint chocolate chip ice cream.

All you need to do is combine the melted ice cream, eggs, and cake mix together. Pour into a well-greased cake pan, and bake for about 30-35 minutes until a toothpick comes out clean. You can then cover it with a simple icing by mixing together powdered sugar and milk. You couldn’t ask for an easier recipe!
