If you’ve ever tasted homemade yogurt, you know it can hardly compare to the store-bought version. And it’s not that hard to make!

To get started, you’ll need an InstantPot, a food thermometer, milk, and some store-bought yogurt. The store-bought yogurt is what you’ll be using as your starter, cultivating the bacteria in the milk into a deliciously creamy yogurt. It’s important that the yogurt you buy contains probiotics since this is the bacteria that will be the thickening agent. 

Instructions:

Pour about 4 cups of milk into a saucepan and heat it over medium-low heat. Use a cooking thermometer to monitor the temperature, and heat until it reaches about 180°F, then remove it from the heat. Then, let the milk cool to around 110°F. 

In a separate bowl, mix 2-3 tablespoons of plain yogurt with a small amount of the cooled milk to make a smooth paste. 

If you’re using an InstantPot, look for a button called “yogurt.” Simply add the milk and starter mix into the pot and press the button. The yogurt will “cook” for 6-8 hours.

The result should be a thick and custard-like yogurt. Once your yogurt sets, remove it from the InstantPot and let it chill in the fridge. Enjoy!

Labneh is a Middle Eastern staple that is a cross between yogurt and cheese. It’s tangy, fresh, and really savory which feels so satisfying. Making it at home is actually pretty simple, it just takes a little bit of time to create. But by the end, you will have this gorgeous spread that you can use as a dip, a spread, or anything you can think of!

Ingredients

The ingredients for this recipe are 32 ounces of yogurt made with whole milk and 3/4 teaspoon of salt.

Instructions

To make the labneh, you first need to combine the whole milk yogurt with the salt. Then, line a bowl with either a thin linen cloth, a muslin cloth, or several layers of cheese cloth. Pour the yogurt mixture into the cloth and tie at the top to make a little bundle. Then, hang this over the kitchen sink or over a fine mesh sieve that is on top of a deep bowl. Drain the mixture for 24-48 hours and when you’re done, you’ll have beautiful labneh! Traditionally the labneh is served with a glug of olive oil in the middle if you’re using it as a dip, and it takes really well to bold spices like sumac or zaatar.

For those that know of Earth Day, it shouldn’t be just one single day that we keep the Earth in our thoughts. Every action you make can leave a positive or negative mark on the world. I have chosen to do everything I can to minimize harm to the Earth. And while I am no where near perfect and still making mistakes along the way, I want to do my best to learn more and more about the things I can do to minimize the damage already done. 🌼 . I made a choice almost 9 years ago to go vegan. Originally, that choice was specifically for health. As time has gone on, I realized what a powerful choice that was. Even past the ethical side, it’s probably one of the least harmful to the environment around us. 🌱Food production, water, hunger, deforestation, ocean life, etc…its all heavily impacted by the choices on our plate. And while I’m not expecting everyone to go vegan, I hope that this is an encouragement for you to consider accepting more plants in your life, become informed about the environment and practices that impact the Earth, make more conscious decisions towards your health, learn more empathy towards yourself and others, and become active members of the solution. That can look like replacing meat with a serving of plant based protein options, being involved with the political scene and making sure that individuals making it into office care about our planet, choosing reusable containers, packing your own lunch…really almost anything. Remember that every small move absolutely counts. ♻ . For dinner tonight decided on some sweet baked plantains, broccoli, baked tempeh, avocado, greens and zucchini. I made my tempeh by dicing 1/3 of a block of tempeh into cubes and tossing it together with 1/2 tbsp soy sauce, 1/2 tsp sriracha, 1 tsp nutritional yeast, 1 tsp maple syrup. 👌🏽
