If you’re looking for a thirst-quenching soup that’s both nourishing and hydrating, then there’s a spicy Mexican soup for you. Here’s your guide to making a Sopa De Fideo that’s sure to whet your appetite every time.

Ingredients:

  • 1/4 cup olive oil
  • 1/2 white onion
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1 teaspoon Kosher salt
  • 1 can tomatoes
  • 2 garlic cloves
  • 6 ounces fideo 
  • 6 cups chicken broth
  • Crumbled queso fresco
  • Cilantro
  • Lime wedges

Instructions:

  1. Heat the olive oil in a large heavy pot. Add the fideo and 1/2 teaspoon salt and cook for 2 to 3 minutes until golden brown.
  2. Pour into a medium bowl and put the garlic, onion, and tomatoes in a large blender. Blend and transfer the mixture to a pot. Cook over medium heat for 10 minutes. Stir in the coriander and cumin along with another 1/2 teaspoon salt.
  3. Pour the fideo and broth into the pot. Simmer over a medium heat for 15 to 18 minutes.
  4. Divide the soups into bowls and top with cilantro and queso fresco. Serve with lime wedges.

  • 1 chopped onion
  • 30 g butter
  • 2 chopped garlic cloves
  • 3 tablespoon all-purpose flour
  • 2 cups of corn
  • 5 cups of water or chicken broth
  • 1 cup sour cream
  • 1/3 cup white wine
  • 1 teaspoon grounded white pepper
  • Salt

Instructions

  1. Melt the butter in a large pan and then add the onion and the garlic. Fry for 5 minutes.
  2. Add in the flour and the corn and stir.
  3. Add in the white wine and let the alcohol evaporate for 3 minutes before adding the water (or chicken broth), and the cream. Season with salt and pepper.
  4. Cook for 35 minutes and check if you need to add more salt.
  5. Pour into serving bowls and enjoy.

Tomato soup is a great thing—a tasty, hot, and quick meal that will delight any cooking enthusiast on a cold day.

The most important thing for making tomato soup is the tomatoes. If you don’t have any good fresh tomatoes at hand, do not hesitate to use quality canned Italian tomatoes that have a wonderful taste.

Ingredients

8 cups chopped tomatoes
4 tablespoons olive oil
1 chopped onion
1 carrot, chopped
1 stalk of chopped celery
3 cloves of garlic
2 and a half cups of stock or water
Salt and pepper to taste

Instructions

Heat oil in a large pot and sauté onions, carrots, celery, and garlic over a medium-low flame, until they soften.

Add tomatoes, cook, and mix together for about 8-10 minutes. When the tomatoes soften, add the stock or water. Season with salt and pepper, bring to a boil, and cook for another 20 minutes over medium heat.

Mash the soup to a smooth texture using a blender. Serve immediately with thyme and rosemary-flavored croutons and some grated Parmesan cheese.

Gabrielle of Eat Drink Shrink shared an amazing recipe for Brussels soup on her blog. Her recipe requires a single package of Brussels sprouts, and you can get 4-6 servings of soup with it—making it a perfect appetizer for your dinner parties this fall.

Ingredients

  • 1 pound Brussels sprouts
  • 2 large shallots, chopped
  • 3 cloves garlic
  • 3 cups vegetable stock
  • 1 cup almond milk
  • 1 cup cashews, soaked
  • 2 tbsp dijon mustard
  • 1/2 cup dry white wine
  • 1 tbsp vegan butter
  • olive oil
  • salt and pepper

Instructions

  1. After setting the oven to 375F, prepare your Brussels sprouts by washing and trimming their stems, and then cutting them in halves or quarters, depending on their size.
  2. Drizzle the sprouts with olive oil, season them with salt and pepper, and let them roast until they’ve softened—for about 20-30 minutes—before setting them aside.
  3. Cook the vegan butter and chopped shallots over medium heat for about three minutes. Once they’re translucent, add garlic to the pan and cook it for two minutes before adding the wine and lowering the temperature.
  4. Blend soaked cashews, almond milk, dijon, and broth with the shallot mixture and roasted Brussels sprouts until smooth.
  5. After blending the mixture, return the pureed soup to the pot. Adjust salt and pepper if needed, and serve while warm.

French cuisine is so delicious but so many of their specialties are so hard to make. This Coq au Vin recipe is very simple and will help you satisfy even your pickiest guests.

Ingredients:

  • 12 oz thick-cut bacon into 1/3-inch slices
  • 5 skin-on, bone-in chicken legs
  • 3 minced celery sticks
  • 1 minced onion
  • 2 tablespoons vegetable oil
  • 1/2 cup tomato paste
  • 3 chopped carrots
  • 12 sprigs thyme
  • 6 sprigs rosemary
  • 1 pound assorted wild mushrooms cut into small pieces
  • 4 cups dry red wine
  • 1 quart low-sodium chicken broth
  • kosher salt
  • freshly ground pepper.

Instructions:

  1. Set the oven to 350 F degrees.
  2. Get an ovenproof pot and add 1 tablespoon of oil.
  3. While you’re waiting for the oil to heat you can season the chicken with salt and pepper. Cook it for 5 to 6 minutes per side.
  4. In the same pot start cooking the bacon together with the celery, onion, and carrots. Cook them all for 7 to 8 minutes.
  5. Pour in the tomato paste, 1 cup wine and let the mix simmer for 2 to 3 minutes.
  6. Pour the other 3 cups wine, wait for the mixture to start boiling.
  7. Let it boil for 15 minutes until the wine is lowered to half.
  8. Place the chicken back and add the broth.
  9. Add the thyme and rosemary together and wait for the sauce to boil again.
  10. Add the cover and place it in the oven for 1 1/4 hours.
  11. While you’re waiting, cook the mushrooms with 1 tablespoon oil for 5 minutes.
  12. Add the chicken to the mushrooms.
  13. Let the sauce in the pot simmer for 20 minutes.
  14. Pour the mushrooms and chicken back in the pot and you’re all done.

This is a more creamy version of the classical Asian corn soup. You can use canned or frozen corn for this dish, but if you have the time and energy—try using freshly cooked corn.

Ingredients

  • 1 chopped onion
  • 30 g butter
  • 2 chopped garlic cloves
  • 3 tablespoon all-purpose flour
  • 2 cups of corn
  • 5 cups of water or chicken broth
  • 1 cup sour cream
  • 1/3 cup white wine
  • 1 teaspoon grounded white pepper
  • Salt

Instructions

  1. Melt the butter in a large pan and then add the onion and the garlic. Fry for 5 minutes.
  2. Add in the flour and the corn and stir.
  3. Add in the white wine and let the alcohol evaporate for 3 minutes before adding the water (or chicken broth), and the cream. Season with salt and pepper.
  4. Cook for 35 minutes and check if you need to add more salt.
  5. Pour into serving bowls and enjoy.

Tomato soup is a great thing—a tasty, hot, and quick meal that will delight any cooking enthusiast on a cold day.

The most important thing for making tomato soup is the tomatoes. If you don’t have any good fresh tomatoes at hand, do not hesitate to use quality canned Italian tomatoes that have a wonderful taste.

Ingredients

8 cups chopped tomatoes
4 tablespoons olive oil
1 chopped onion
1 carrot, chopped
1 stalk of chopped celery
3 cloves of garlic
2 and a half cups of stock or water
Salt and pepper to taste

Instructions

Heat oil in a large pot and sauté onions, carrots, celery, and garlic over a medium-low flame, until they soften.

Add tomatoes, cook, and mix together for about 8-10 minutes. When the tomatoes soften, add the stock or water. Season with salt and pepper, bring to a boil, and cook for another 20 minutes over medium heat.

Mash the soup to a smooth texture using a blender. Serve immediately with thyme and rosemary-flavored croutons and some grated Parmesan cheese.

Brussels sprouts are one kind of the veggies that should be on your menu this fall, because they come with a long list of health benefits. If you’re not quite sure how to eat them—using them to make a delicious and creamy soup is always a safe choice.

Gabrielle of Eat Drink Shrink shared an amazing recipe for Brussels soup on her blog. Her recipe requires a single package of Brussels sprouts, and you can get 4-6 servings of soup with it—making it a perfect appetizer for your dinner parties this fall.

Ingredients

  • 1 pound Brussels sprouts
  • 2 large shallots, chopped
  • 3 cloves garlic
  • 3 cups vegetable stock
  • 1 cup almond milk
  • 1 cup cashews, soaked
  • 2 tbsp dijon mustard
  • 1/2 cup dry white wine
  • 1 tbsp vegan butter
  • olive oil
  • salt and pepper

Instructions

  1. After setting the oven to 375F, prepare your Brussels sprouts by washing and trimming their stems, and then cutting them in halves or quarters, depending on their size.
  2. Drizzle the sprouts with olive oil, season them with salt and pepper, and let them roast until they’ve softened—for about 20-30 minutes—before setting them aside.
  3. Cook the vegan butter and chopped shallots over medium heat for about three minutes. Once they’re translucent, add garlic to the pan and cook it for two minutes before adding the wine and lowering the temperature.
  4. Blend soaked cashews, almond milk, dijon, and broth with the shallot mixture and roasted Brussels sprouts until smooth.
  5. After blending the mixture, return the pureed soup to the pot. Adjust salt and pepper if needed, and serve while warm.

French cuisine is so delicious but so many of their specialties are so hard to make. This Coq au Vin recipe is very simple and will help you satisfy even your pickiest guests.

Ingredients:

  • 12 oz thick-cut bacon into 1/3-inch slices
  • 5 skin-on, bone-in chicken legs
  • 3 minced celery sticks
  • 1 minced onion
  • 2 tablespoons vegetable oil
  • 1/2 cup tomato paste
  • 3 chopped carrots
  • 12 sprigs thyme
  • 6 sprigs rosemary
  • 1 pound assorted wild mushrooms cut into small pieces
  • 4 cups dry red wine
  • 1 quart low-sodium chicken broth
  • kosher salt
  • freshly ground pepper.

Instructions:

  1. Set the oven to 350 F degrees.
  2. Get an ovenproof pot and add 1 tablespoon of oil.
  3. While you’re waiting for the oil to heat you can season the chicken with salt and pepper. Cook it for 5 to 6 minutes per side.
  4. In the same pot start cooking the bacon together with the celery, onion, and carrots. Cook them all for 7 to 8 minutes.
  5. Pour in the tomato paste, 1 cup wine and let the mix simmer for 2 to 3 minutes.
  6. Pour the other 3 cups wine, wait for the mixture to start boiling.
  7. Let it boil for 15 minutes until the wine is lowered to half.
  8. Place the chicken back and add the broth.
  9. Add the thyme and rosemary together and wait for the sauce to boil again.
  10. Add the cover and place it in the oven for 1 1/4 hours.
  11. While you’re waiting, cook the mushrooms with 1 tablespoon oil for 5 minutes.
  12. Add the chicken to the mushrooms.
  13. Let the sauce in the pot simmer for 20 minutes.
  14. Pour the mushrooms and chicken back in the pot and you’re all done.
