Asturias, a small region located in the northwest of Spain, has long been known as a gastronomic paradise, at least for Spaniards. Known for its heavy, meat-centric cuisine that is partially a result of the area’s mountainous terrain and cool, wet climate, there are plenty of dishes that you have to try here. The number one must-try from Asturias is a meat-centric dish that will fill you up like nothing else: the cachopo.

What It Is

The base of a cachopo is meat, meat, and a little bit more meat. In traditional versions of the dish, ham is placed between two thin veal fillets along with a mild, white cheese that is usually sourced from the region. The ham used in the dish can either be regular ham or any one of the number of Spanish-cured hams, such as Iberico or Serrano.

A True Delicacy

The dish is then rolled in egg and breadcrumbs and deep-fried until cooked, resulting in a cheesy, gooey, concoction that will leave you in amazement.

Traditionally served with fried potatoes, you will often find cachopos topped with peppers, mushrooms, or onions to give a little bit of extra flavor to this deep-fried delight. No matter if you’re the type of person who takes out frozen meat from the night before and lets it thaw slowly in the fridge or someone who does this in the last minute using hot water or the microwave, there is a way to make sure your meat will always be absolutely delicious. You only need one ingredient for the marinade—vinegar.

Simply add a tablespoon of vinegar to the bag of frozen meat and let it thaw and marinade simultaneously. As it thaws, it will get tender from the vinegar’s acidity and it will get a mild vinegar flavor. After the meat is thawed, simply remove it from the bag and cook it as you planned.

We mention on our website that we hand-select each steak we send you before putting it in your box. Here's what we mean by that, and the tests we put our steaks through before we send them: . 1. We vet a New York strip from every beef we sell, testing it for tenderness and flavor standards. If it doesn't make high marks on these standards, we don't sell those New Yorks and Ribeyes as our premium steaks. . 2. If a steak has confirmation issues and doesn't look like a New York or Ribeye should look like, we don't send it as a premium cut. So you'll never get a Ribeye shaped like a shoe. Similarly, if you're ordering a full-sized New York Strip, you'll never get a steak that's been truncated with the tip cut off. . 4. We dry-age all of our steaks (and all of our beef, for that matter). It's a more expensive process, but it results in better flavor and tenderness than wet-aging. . 5. We pull any New Yorks with weird veins running through the steak that will cause a bad eating experience or less tenderness. . 6. We make sure both New Yorks and Ribeyes are even all the way across in cutting. If they're cut crooked, we don't sell them as a premium steak. . 7. Obviously, we don't sell anything with bloodshot marks or weird coloration on the steak. . 8. We won't send you a steak in a package that has ice crystal bubbles in it. Ice crystals often indicate 1 of 2 things: 1, that the package has popped, which will affect flavor and make steak juices bleed all over your fridge, or, 2, it's a sign of a too-slow freezing process, which means that the steak denatured and released gasses during freezing, which appear as air bubbles inside the package. We blast-freeze all our steaks to avoid this. Another problem with slow freezing in a steak package is that it allows the formation of large ice crystals, which then act as tiny knives cutting into the body of the steak, which reduces tenderness, impacts flavor, and makes juices leak out during cooking. . 9. We don't send cheesy thin steaks. All of our steaks are at least 1 1/4 inches thick, most of our larger New Yorks and Ribeyes are cut at 1 3/4 inches. . So that's a brief look into what goes our steak selection!

If you love going out and having Mongolian beef, you can now make it at home in 30 minutes.

Ingredients:

For the Mongolian beef recipe you need 1 1/4 pound flank steak, 5 teaspoons cornstarch, 1/4 teaspoon black pepper, 1 teaspoon baking soda, 1 tablespoon water, 1/2 teaspoon sesame oil, 1/2 teaspoon kosher salt, 6 dried chilli peppers, 2 tablespoons soy sauce, 3 tablespoons oyster sauce, tablespoon minced ginger, 1 tablespoon rice vinegar, 1 tablespoon minced garlic, 1/2 cup diced white onion, 1 cup diced green bell pepper, 2 tablespoons sliced green onions, 1 tablespoon vegetable oil, 1 cup diced red bell pepper.

Instructions:

Begin by cutting the flank steak in small cubes. Mix the baking soda, salt, steak, pepper, water, 1 tablespoon cornstarch, sesame oil, and 1 tablespoon vegetable oil in a bowl. Leave the steak in the mixture for 10 minutes. In another bowl mix the soy sauce, rice vinegar, oyster sauce, and 2 teaspoons cornstarch. Cook the beef in a pan together with 2 tablespoons oil.

Cook it for 3 minutes and add the garlic, chili, ginger and continue cooking for half a minute. Include the bell peppers and onions, continue stir-frying for 2 more minutes. Add the sauce and leave it on for half a minute. You can now try the Mongolian beef, season it with salt and pepper. Top it off with green onions.

Cut of Beef

Different recipes will say to use different cuts of beef, but try to go for rump roast or topside of beef. These are both from the round section of the cow, and deliver the best results in the oven.

Twine

Make sure to tie the beef with kitchen twine every 3 inches. This is important not only to make sure the roast looks aesthetically the same throughout but to cook it evenly as well.

A well-made, tasty gravy can save a multitude of meal sins. Have the kids preoccupied you, so your turkey is a tad overcooked? Got caught on the phone with your bestie for an hour as she regales her most recent crisis? Now your roast lamb is well and truly roasted!

This simple gravy recipe will bring that otherwise tragic meal back to life.

Food Cupboard Staples Is All It Takes

A few simple ingredients are all you need:

5 tablespoons butter

Cracked black pepper

4 tablespoons flour

1 quart stock-in-a-box, turkey or chicken

2 tablespoons Worcestershire sauce

1 to 2 cups pan drippings

Good Gravy – That’s Easy!

Melt the butter in a pan over a medium heat, whisk in your pepper before adding the flour. Allow that to simmer for a couple of minutes before adding the stock and Worcestershire sauce. Increase the heat slightly to thicken the gravy, stirring gently as you go. When you’ve reached the ideal thick consistency, remove from the heat, cover and save for later.

When ready to serve, heat your gravy in a pan with the turkey, beef, lamb, pork or duck drippings to create a mouth-watering accompaniment to your meal.

No matter if you’re the type of person who takes out frozen meat from the night before and lets it thaw slowly in the fridge or someone who does this in the last minute using hot water or the microwave, there is a way to make sure your meat will always be absolutely delicious. You only need one ingredient for the marinade—vinegar.

Simply add a tablespoon of vinegar to the bag of frozen meat and let it thaw and marinade simultaneously. As it thaws, it will get tender from the vinegar’s acidity and it will get a mild vinegar flavor. After the meat is thawed, simply remove it from the bag and cook it as you planned.

We vet a New York strip from every beef we sell, testing it for tenderness and flavor standards. If it doesn't make high marks on these standards, we don't sell those New Yorks and Ribeyes as our premium steaks. . 2. If a steak has confirmation issues and doesn't look like a New York or Ribeye should look like, we don't send it as a premium cut. So you'll never get a Ribeye shaped like a shoe. Similarly, if you're ordering a full-sized New York Strip, you'll never get a steak that's been truncated with the tip cut off. . 4. We dry-age all of our steaks (and all of our beef, for that matter). It's a more expensive process, but it results in better flavor and tenderness than wet-aging. . 5. We pull any New Yorks with weird veins running through the steak that will cause a bad eating experience or less tenderness. . 6. We make sure both New Yorks and Ribeyes are even all the way across in cutting. If they're cut crooked, we don't sell them as a premium steak. . 7. Obviously, we don't sell anything with bloodshot marks or weird coloration on the steak. . 8. We won't send you a steak in a package that has ice crystal bubbles in it. Ice crystals often indicate 1 of 2 things: 1, that the package has popped, which will affect flavor and make steak juices bleed all over your fridge, or, 2, it's a sign of a too-slow freezing process, which means that the steak denatured and released gasses during freezing, which appear as air bubbles inside the package. We blast-freeze all our steaks to avoid this. Another problem with slow freezing in a steak package is that it allows the formation of large ice crystals, which then act as tiny knives cutting into the body of the steak, which reduces tenderness, impacts flavor, and makes juices leak out during cooking. . 9. We don't send cheesy thin steaks. All of our steaks are at least 1 1/4 inches thick, most of our larger New Yorks and Ribeyes are cut at 1 3/4 inches. . If you love going out and having Mongolian beef, you can now make it at home in 30 minutes.

Ingredients:

For the Mongolian beef recipe you need 1 1/4 pound flank steak, 5 teaspoons cornstarch, 1/4 teaspoon black pepper, 1 teaspoon baking soda, 1 tablespoon water, 1/2 teaspoon sesame oil, 1/2 teaspoon kosher salt, 6 dried chilli peppers, 2 tablespoons soy sauce, 3 tablespoons oyster sauce, tablespoon minced ginger, 1 tablespoon rice vinegar, 1 tablespoon minced garlic, 1/2 cup diced white onion, 1 cup diced green bell pepper, 2 tablespoons sliced green onions, 1 tablespoon vegetable oil, 1 cup diced red bell pepper.

Instructions:

Begin by cutting the flank steak in small cubes. Mix the baking soda, salt, steak, pepper, water, 1 tablespoon cornstarch, sesame oil, and 1 tablespoon vegetable oil in a bowl. Leave the steak in the mixture for 10 minutes. In another bowl mix the soy sauce, rice vinegar, oyster sauce, and 2 teaspoons cornstarch. Cook the beef in a pan together with 2 tablespoons oil.

Cook it for 3 minutes and add the garlic, chili, ginger and continue cooking for half a minute. Include the bell peppers and onions, continue stir-frying for 2 more minutes. Add the sauce and leave it on for half a minute. You can now try the Mongolian beef, season it with salt and pepper. Top it off with green onions.

Cut of Beef

Different recipes will say to use different cuts of beef, but try to go for rump roast or topside of beef. These are both from the round section of the cow, and deliver the best results in the oven.

Twine

Make sure to tie the beef with kitchen twine every 3 inches. This is important not only to make sure the roast looks aesthetically the same throughout but to cook it evenly as well.

Roasting

A well-made, tasty gravy can save a multitude of meal sins. Have the kids preoccupied you, so your turkey is a tad overcooked? Got caught on the phone with your bestie for an hour as she regales her most recent crisis? Now your roast lamb is well and truly roasted!

This simple gravy recipe will bring that otherwise tragic meal back to life.

Food Cupboard Staples Is All It Takes

A few simple ingredients are all you need:

5 tablespoons butter

Cracked black pepper

4 tablespoons flour

1 quart stock-in-a-box, turkey or chicken

2 tablespoons Worcestershire sauce

1 to 2 cups pan drippings

Good Gravy – That’s Easy!

Melt the butter in a pan over a medium heat, whisk in your pepper before adding the flour. Allow that to simmer for a couple of minutes before adding the stock and Worcestershire sauce. Increase the heat slightly to thicken the gravy, stirring gently as you go. When you’ve reached the ideal thick consistency, remove from the heat, cover and save for later.

When ready to serve, heat your gravy in a pan with the turkey, beef, lamb, pork or duck drippings to create a mouth-watering accompaniment to your meal.
