Here’s a familiar situation: you buy a bunch of bananas, thinking you’ll eat one every day. Then you forget they exist and by the end of the week, they’re so ripe there’s no way you can eat them all before they go bad. What do you do? Why, make this delicious vegan banana bread recipe, of course. Check it out below.

Ingredients:

  • 4 bananas
  • 1/4 cup vegetable oil
  • 1/4 nondairy milk (Choose your favorite. We like oat milk!)
  • 1/2 cup brown sufar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit, ideally using an oven thermometer to confirm the correct temperature.
  2. Grease a loaf pan with nonstick cooking spray or some vegetable oil.
  3. Mash your bananas in a bowl. Add brown sugar, oil, vanilla, and almond milk, whisking until combined.
  4. Now add in the dry ingredients (flour, baking soda, salt, and cinnamon). Stir until combined, being careful not to over stir.
  5. Transfer the batter to your pan, adding optional toppings like nuts, chocolate chips, or sliced bananas.
  6. Bake for 45 minutes. Line the top of the pan with foil and bake for 15 more minutes, or until a toothpick comes out of the center of the banana bread clean.

If you have it on a regular basis for breakfast in the morning, cereal can get really boring. Let’s face it, if you’re eating a healthy cereal like Cheerios or Wheaties every day, you can even get to the point of dreading your morning breakfast if you don’t switch things up a bit.

One of my favorite ways to do this is to add sliced fruit or berries to my cereals every morning. Here are three fruits that you can try!

Banana

Slicing a banana and putting in on my cereal is a tradition I have kept going since I was a young kid. Adding the delicious sweetness to a normal type of cereal makes for both a sweet and a nutritious breakfast choice.

Strawberries

A handful of strawberries sliced up and placed upon a bed of cereal and milk is another great way to kick off your morning. The sweet and tangy flavor of these berries work together perfectly with the flavors of milk and the grains that make up cereal.

Blueberries

Most of you probably know that tomatoes are technically fruit while watermelon belongs to the group of vegetables. But did you know about this berry confusion that has many people perplexed? Apparently, if we’re to believe the botanical definitions, bananas are berries, but strawberries aren’t.

Categorizing and defining plants is not an easy job and we’re sure the people in charge of it did the best they could, but some things still surprise us. Berries are one of the fruit subcategories, just like citrus, stonefruit, pome, and drupe. Since the technical definition states that berry is a fruit produced from the ovary of a single flower, further research tells us that bananas fall into this category but strawberries and raspberries don’t.

In order to be a berry, fruit needs to have two or more seeds and develop from a single-ovary flower. Bananas fits into this description, and so do tomatoes, kiwis, and eggplants.

What about strawberries? They are known as “accessory fruits,” which means their flesh doesn’t come from the ovaries, but from the receptacle in which the ovaries are found. Good luck knowing your fruits from now on!

Ingredients:

  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons milk
  • 1 egg
  • 1/4 cup melted coconut oil
  • 1/2 cup chopped walnuts
  • 1 cup granulated sugar
  • 1/4 cup milk
  • 1 cup mashed ripe banana
  • 1 teaspoon baking powder
  • 1/2 cup chopped unsweetened coconut

Instructions:

  1. Set the oven to 350 F degrees and prepare a muffin tin with 12 cups. Set up a mixer and grab a bowl.
  2. Fill the bowl with sugar, baking powder, flour, and baking soda.
  3. Then, include the coconut oil and start mixing.
  4. After a minute, combine the mixture with the vanilla, egg, mashed bananas, and milk.
  5. Pour in the coconut and walnuts and mix again.
  6. You can now fill the cups with the batter. You can top them off with more coconut as well.
  7. Leave the tin in the oven for 24 to 26 minutes. You can check whether they’re done with a toothpick.
  8. Leave the banana coconut muffins to cool for 10 minutes before you serve them.

Mix all of that together, then add two tablespoons greek yogurt and two tablespoons of honey. Finish off with one tablespoon baking soda and a little bit of salt. For the topping, you can always experiment with blueberries, almond butter and all of the fruits that you like.

If you have it on a regular basis for breakfast in the morning, cereal can get really boring. Let’s face it, if you’re eating a healthy cereal like Cheerios or Wheaties every day, you can even get to the point of dreading your morning breakfast if you don’t switch things up a bit.

One of my favorite ways to do this is to add sliced fruit or berries to my cereals every morning. Here are three fruits that you can try!

Banana

Slicing a banana and putting in on my cereal is a tradition I have kept going since I was a young kid. Adding the delicious sweetness to a normal type of cereal makes for both a sweet and a nutritious breakfast choice.

Strawberries

A handful of strawberries sliced up and placed upon a bed of cereal and milk is another great way to kick off your morning. The sweet and tangy flavor of these berries work together perfectly with the flavors of milk and the grains that make up cereal.

Blueberries

Finally, if you want a super easy choice that you don’t even have to use a knife to slice up to put in your cereal, why not try blueberries? These tart and slightly sweet little berries are a great option, if you’re looking for a simple choice that isn’t as sweet as the two previous options.

Egg whites are so often used in recipes, but they can be substituted for if you don’t have them in your kitchen. Whether you’re simply out of eggs, or if you follow a vegan diet, or have an egg allergy—there are plenty of things that you can use to substitute for them.

Here are three other options that you might have lurking around your kitchen that you can use!

Aquafaba

This egg white substitute—made with the whipped solution resulting from soaking white beans in water—is arguably the best option out there. While it requires a bit of time to make, this substitute is great for any possible recipe use of egg whites.

Applesauce

If egg whites are used for moisture in a baking recipe, unsweetened applesauce can surprisingly be a great option to substitute them for! Don’t use too much of it, and try to get as smooth as an applesauce as you can, but this can work out great.

Mashed Banana

Mashed bananas can also be used for egg whites in a baking recipe—if you don’t mind a bit of a sweet flavor encroaching on your final product. The consistency of a ripe, mashed banana is a great proxy for egg whites.

Most of you probably know that tomatoes are technically fruit while watermelon belongs to the group of vegetables. But did you know about this berry confusion that has many people perplexed? Apparently, if we’re to believe the botanical definitions, bananas are berries, but strawberries aren’t.

Categorizing and defining plants is not an easy job and we’re sure the people in charge of it did the best they could, but some things still surprise us. Berries are one of the fruit subcategories, just like citrus, stonefruit, pome, and drupe. Since the technical definition states that berry is a fruit produced from the ovary of a single flower, further research tells us that bananas fall into this category but strawberries and raspberries don’t.

In order to be a berry, fruit needs to have two or more seeds and develop from a single-ovary flower. Bananas fits into this description, and so do tomatoes, kiwis, and eggplants.

What about strawberries? They are known as “accessory fruits,” which means their flesh doesn’t come from the ovaries, but from the receptacle in which the ovaries are found. Good luck knowing your fruits from now on!

Muffins are such a popular choice for a fast breakfast, dinner, and even a snack. You can choose between so many different tastes and get creative every time you make them. These banana coconut muffins are delicious enough that everyone will want to borrow the recipe.

Ingredients:

  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons milk
  • 1 egg
  • 1/4 cup melted coconut oil
  • 1/2 cup chopped walnuts
  • 1 cup granulated sugar
  • 1/4 cup milk
  • 1 cup mashed ripe banana
  • 1 teaspoon baking powder
  • 1/2 cup chopped unsweetened coconut

Instructions:

  1. Set the oven to 350 F degrees and prepare a muffin tin with 12 cups. Set up a mixer and grab a bowl.
  2. Fill the bowl with sugar, baking powder, flour, and baking soda.
  3. Then, include the coconut oil and start mixing.
  4. After a minute, combine the mixture with the vanilla, egg, mashed bananas, and milk.
  5. Pour in the coconut and walnuts and mix again.
  6. You can now fill the cups with the batter. You can top them off with more coconut as well.
  7. Leave the tin in the oven for 24 to 26 minutes. You can check whether they’re done with a toothpick.
  8. Leave the banana coconut muffins to cool for 10 minutes before you serve them.

Pancakes are officially the perfect breakfast meal. They are fast to make, plus you can really experiment with so many recipes. We rounded up two of our favorite pancake recipes to satisfy all your senses.

Banana Oatmeal Pancakes

This is one of the most delicious pancake recipes out there. First get 1/2 cup of almond milk, two eggs, and one egg white. Put them all in a blender and add one banana, one and a half cups of oats and two tablespoons of maple syrup. These pancakes require a pinch of salt and two tablespoons of baking powder. If you like vanilla, feel free to add it. Blend it nicely and start cooking.

Blueberry Chia Seed Pancakes

Another one of those pancake recipes that you’ll fall in love with at first sight. Chia seeds are also known as a superfood, so you want those tiny seeds in all of your meals. You will need half a cup of whole wheat flour, two tablespoons chia seeds, two eggs and half a cup of almond milk. Mix all of that together, then add two tablespoons greek yogurt and two tablespoons of honey. Finish off with one tablespoon baking soda and a little bit of salt. For the topping, you can always experiment with blueberries, almond butter and all of the fruits that you like.
