An easy, hearty, and delicious meal.
Ingredients (serves 4):
- 14 oz fish pie mix
- 1.5 pounds of potatoes
- 2 cups spinach
- 1 cup frozen peas
- 1 cup frozen sweet corn
- 1 cup single cream
- 1 cup veg stock
Instructions:
- If your fish pie mix is frozen, defrost it.
- Preheat your oven to 350 ℉.
- Chop the potatoes and add to a large pot of salted water.
- Place this on the heat and bring to a boil.
- Meanwhile, add the frozen peas and sweet corn to a pot of salted water and bring to a boil. Cook these for roughly 5 minutes and then drain.
- Cook the potatoes for 15-20 mins, until soft, and then drain.
- Add some butter and a splash of milk to the potatoes and then mash them until smooth.
- In a large oven-proof dish, place the fish pie mix. Pour over the cream and the veg stock, and then add the spinach and the cooked peas and sweetcorn.
- Stir this all through, ensuring it’s mixed well.
- Add the mashed potato on top in an even layer.
- Sprinkle the grated cheese over and cover with foil.
- Pop in the oven for 30 minutes.
- Remove the foil and cook for another 10-20 minutes, until the cheese is browned.
- Serve with some steamed veggies of your choice.
