Roasted Potatoes Are Easy, Delicious, And Vegan!

If you need to feed a crowd but are on a budget, potatoes need to be your best friend. They are super cheap, very filling, and are just absolutely delicious. Roasted potatoes are also a great side dish to throw together if you’re low on time but want something delicious. Making them super yummy is all about the way you cut the potatoes as well as the spices you use. But, once you get the hang of the recipe, you can make them in your sleep.

  1. Begin by setting the oven to 400F and line a baking sheet with parchment paper.
  2. The cut of your potatoes will dictate how long they cook for. If you’re in a time crunch, dice them into small cubes so they cook quicker. If you aren’t, cut them any way or size you want.
  3. Put the potatoes on the baking sheet and pour a few tablespoons of olive oil over them, about 1-1 1/2 tablespoon per potato.
  4. Sprinkle over salt, garlic powder, chili powder, paprika, a little cumin, red chili flakes, and a bit of oregano, and mix well.
  5. Bake in the oven for about 15-20 minutes depending on how thick you cut them until the potatoes are soft in the middle but a crunchier exterior.
