If you’re looking for a healthier alternative to French fries, you probably know that zucchini fries are your best possible option but have you ever tried making them?

You don’t have to be a baking expert to make these delicious fries, especially if you follow the recipe, shared by Lindsay Grimes Freedman on her blog The Toasted Pine Nut. She used Parmesan cheese coating to make them even more delicious, and cheese lovers will especially enjoy this tiny adjustment.

Ingredients:

  • 4 small zucchinis
  • 2 eggs
  • 1 cup grated Parmesan cheese
  • 2 tablespoons Italian seasoning
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground mustard
  • marinara sauce for dipping
  • sea salt

Instructions:

  1. While preheating the oven to 400F, cut your zucchinis into smaller pieces. You can start it off by cutting the ends, halving your zucchinis, and cutting each half into eight wedges.
  2. Put your zucchini wedges in a metal strainer in the sink, and leave them there for a few minutes after sprinkling them with salt.
  3. Whisk the eggs in one bowl and stir the Italian seasoning, onion powder, ground mustard, and grated Parmesan cheese in another.
  4. Dip zucchini wedges in the egg mixture and coat them with cheesy seasoning. Once they’re properly coated, place them on a lined baking sheet.
  5. Place them in the baking oven for 20 minutes, and use the marinara sauce as a dip once they’re done baking.
