Here’s what you need to make this CREAMY COCONUT LENTIL CURRY: 2 tablespoons coconut oil 1 tablespoon each: cumin seeds and coriander seeds 1 head of garlic, chopped (10-12 cloves) 1 – 28-ounce can of crushed tomatoes 2 tablespoons ginger, chopped 1 tablespoon turmeric 2 teaspoons sea salt 1 cup dried brown lentils Optional: 1-2 teaspoons cayenne powder 1 – 15-ounce can coconut milk A few handfuls of cherry tomatoes 1 cup chopped cilantro . Method

  1. Cut sweet potatoes into a small dice so they cook quickly in the pot.
  2. Sautee the sweet potatoes in coconut oil
  3. While they’re cooking, cut onion, garlic, ginger, and a chili. If you don’t want the curry spicy, omit the chili.
  4. Once the sweet potatoes have started to soften, add in the onion, garlic, ginger, and chili.
  5. Pour in diced tomatoes or tomato puree as well as the following spices: curry, turmeric, cumin, coriander, paprika, and salt.
  6. Cook everything together for a few minutes so the flavors can meld.
  7. Then, add in lentils and enough water according to how much you’re using.
  8. Cook everything together until the lentils get plump and soft.
  9. Serve with a sprinkling of cilantro or parsley.
