  1. Start off by soaking your beans in water overnight. The more water and the bigger bowl you use, the quicker and more evenly your beans will cook – so use about 10 cups of water for every pound of dried beans. Pro-tip: change the water as often as you can, or at least every few hours.
  2. Drain and rinse the beans and put them in a fresh pot with as much water as you soaked them in.
  3. Put a bay leaf in the pot and bring it to a boil. Turn it down to a simmer and cook for about 45 minutes until the beans are soft.
  4. Once they’re cooked, drain them and cook them with any spices and other ingredients you like.
