Lebanese Green Beans Are So Yummy

Loubieh, or Lebanese green beans are a delicious stew that is also one of the most recognizable Lebanese dishes. This amazing mix of vegetables is a full plate of amazing flavors. Making it will only take you an hour and 10 minutes, but every minute will be worth it after you try the stew.

Ingredients:

  • 5 minced garlic cloves
  • 12 oz fresh green beans, cut into 2-inch pieces
  • 1/2 cup slivered almonds
  • 1 diced medium onion
  • 1 cup cooked or canned chickpeas
  • 1 teaspoon ground cumin
  • 2 tablespoons olive oil
  • 1 14-oz can diced tomatoes
  • 2 tablespoons tomato paste
  • salt
  • pepper
  • 1 1/2 cups vegetable broth
  • fresh parsley

Instructions:

  1. Set the stove to medium-low heat. Get a pot, add oil, and start cooking the onion. After 25 or 30 minutes you can also include the garlic.
  2. Cook for 1 more minute, then pour the almonds, broth, tomato paste, green beans, diced tomatoes, chickpeas, cumin. Mix all the ingredients together very well.
  3. Turn the heat up and wait for the mix to simmer. Once it does you can lower the heat and wait for the beans to become softer and the mix to be thicker. This should take between 20 and 30 minutes.
  4. Add salt and pepper. You can now serve the Lebanese green beans hot and top each plate with parsley.
