You may be familiar with this classic French dish from the Disney movie, Ratatouille. And if you remember, it does require a bit of time to perfectly layout and cook the vegetables. But fortunately, there’s an equally delicious “lazy” version that is perfect for busy days.
Ingredients
- 1 large eggplant
- 2 zucchinis
- 1 bell pepper
- 1 large onion
- 2-3 cloves of garlic
- 1 can of diced tomatoes
- Olive oil
- Salt and pepper
- Herbs de Provence or mixed dried herbs
Instructions:
- Start by washing and chopping all your vegetables into bite-sized pieces. Don’t worry about making them perfect.
- In a large pot or deep pan, heat a generous glug of olive oil over medium heat. Add the chopped onion and garlic. Sauté until they’re soft and fragrant.
- Add the eggplant, zucchini, and bell pepper to the pot. Stir everything together and let it cook for about 5-7 minutes.
- Pour in the can of diced tomatoes with their juice. Add a good pinch of salt, pepper, and a sprinkling of herbs de Provence. Stir everything together. Reduce the heat to low and let the ratatouille simmer uncovered for about 20-30 minutes.
- Once the vegetables are tender, it’s ready to serve. Garnish with fresh basil leaves for a pop of color and enjoy!
