How To Make Lazy Ratatouille

You may be familiar with this classic French dish from the Disney movie, Ratatouille. And if you remember, it does require a bit of time to perfectly layout and cook the vegetables. But fortunately, there’s an equally delicious “lazy” version that is perfect for busy days. 

Ingredients

  • 1 large eggplant
  • 2 zucchinis
  • 1 bell pepper
  • 1 large onion
  • 2-3 cloves of garlic
  • 1 can of diced tomatoes
  • Olive oil
  • Salt and pepper
  • Herbs de Provence or mixed dried herbs

Instructions:

  1. Start by washing and chopping all your vegetables into bite-sized pieces. Don’t worry about making them perfect.
  2. In a large pot or deep pan, heat a generous glug of olive oil over medium heat. Add the chopped onion and garlic. Sauté until they’re soft and fragrant. 
  3. Add the eggplant, zucchini, and bell pepper to the pot. Stir everything together and let it cook for about 5-7 minutes.
  4. Pour in the can of diced tomatoes with their juice. Add a good pinch of salt, pepper, and a sprinkling of herbs de Provence. Stir everything together. Reduce the heat to low and let the ratatouille simmer uncovered for about 20-30 minutes. 
  5. Once the vegetables are tender, it’s ready to serve. Garnish with fresh basil leaves for a pop of color and enjoy!
