Healthy but Filling Fall Dishes

As we approach the colder months, we often reach for richer, heartier foods to keep us warm. These comfort foods bring us joy and fill our stomachs, but they don’t have to be unhealthy and full of calories. Here are some healthy fall dishes that will keep you satisfied no matter how large your appetite.

Butternut Squash Soup

A perfect mix of sweet and savory, this velvety soup goes perfect with your favorite whole grain bread. For extra flavor, try making your own vegetable broth to add intensity and freshness.

Butternut squash and white bean soup✨ I love soup all year around, but something about soup in the fall feels so right. Pair it with crusty sourdough and you have yourself an all star meal. Recipe on my blog or below INGREDIENTS 1 leek – finely chopped with green top removed 1/2 onion – finely chopped 3 cloves garlic – minced 3 stalks celery- finely chopped 4 cups vegetable broth 1 can tomatoes 2 cans white beans – drained 1/2 cup basil – finely chopped 1/2 cup parsley – finely chopped 1 small butternut squash – cubed 1 tsp italian seasoning 1 tsp mustard 2 tbsp white wine vinegar 1 tbsp miso 1 tbsp tomato paste 2 tbsp nutritional yeast 1 tbsp maple syrup 1 tbsp olive oil – swirled on top of soup 4 cups leafy greens – chopped salt/pepper to taste INSTRUCTIONS Heat oil over medium heat in a large pot or instant pot. Add leeks, onion, garlic, and celery. Cook for 5 minutes. Add all remaining ingredients except for greens. Bring to a simmer and cook for 20-25 minutes on the stove top or 10 minutes in the instant pot. Lastly fold in your leafy greens and stir until wilted.
