Rice is typically used in Southeast Asian countries and it’s a mega staple at the table. It can be eaten as part of the main dish and sometimes it can be used in glutinous rice form as a desert. It’s the third most sought after agricultural commodity in the world and it has long-standing roots in the Asian region.

Rice is made up of carbs with little traces of protein and almost no fat. Its main service is to give your body the energy it needs. Black rice is considered one of the healthiest types of rice out there and here are some facts to explain why.

Forbidden Rice

Black rice is also called forbidden rice and for good reasons. Health experts suggest that black rice is rich in antioxidants similar to that of blueberries. They’re a rich color and they contain a high level of anti-oxidants and can even help prevent cardiovascular diseases too!

Vegan Black rice pudding with coconut and mango! 🥭 🥥 ⠀⠀ Black rice, also known as forbidden rice, is a variety of rice that is black in colour and turns purple on cooking. It’s rich in antioxidants, iron and vitamin E and is found in many south Asian countries. ⠀⠀ This sticky rice pudding is famous in Indonesia (please correct me if I’m wrong) and is cooked in coconut milk! It’s not very sweet and is extremely pleasant to eat. ⠀⠀ Recipe: 1/4 cup black rice 3/4 cup coconut milk 1 1/4 cup water Small pinch of salt. 1-2 drops vanilla essence 1 1/2 tbsp@of sugar Mango to serve Toasted coconut shavings to serve ⠀⠀ 1. Add the rice, coconut milk, 1 cup water and salt in a non-stick pan and bring it to a boil. 2. Once boiled, Lower the heat and let it simmer for 40 minutes. 3. Now add the sugar, cardamom powder, vanilla and mix well. 4. Cover and cook for 20 minutes, while stirring once in between. If the liquid falls short, add 1/4 cup more of water. The cooking time depends on the rice, the older it is, the longer it’ll take to cook. Alternately, you can even soak the rice for 4-5 hours to decrease the cooking time. 5. Once the rice is done (it might take longer), remove from heat and let it cool. It should not be too dry as it will soak more liquid once cooled. 6. Enjoy warm or cold with a splash of coconut milk, cold mango and toasted coconut! ⠀⠀ * things to remember – this Indonesian pudding tastes best with mango. The cooking time depends on the quality of the grain. Since I have not soaked it, it’s important to cook this in a nonstick pan and keep it COVERED while cooking. Do not open it frequently.
