3 Omelet Fillings That Never Fail

Omelet is a quick, easy, and delicious meal at any time of day. Once you’ve honed your technique, add protein, herbs, or carbs to make your omelets more interesting and substantial.

Prawn and Green Herbs

Ingredients (for 2 omelets):

  • 1/4 cup of butter
  • 4 eggs
  • 1 cup of fresh prawns
  • 1 big handful of mixed green herbs
  • 1 lemon

Instructions:

  1. In an iron pan, melt half of the butter over a medium heat.
  2. Add two whisked eggs, don’t stir the mix but gently move the pan.
  3. In another pan, fry half of the prawns in a teaspoon of oil.
  4. As the bottom of the omelet starts to cook, add the cooked prawns and half of the finely chopped herbs to the middle of the omelet.
  5. Fold the omelet in half, cook for another 2 minutes, and then serve.

Tomato and Goats Cheese

Ingredients:

  • 1/4 cup of butter
  • 4 eggs
  • 2 large tomatoes
  • 1/2 cup of soft goat cheese

Instructions:

  1. In an iron pan, melt half of the butter over a medium heat.
  2. Add two whisked eggs, don’t stir the mix but gently move the pan.
  3. As the omelet starts to cook on the bottom, add 1 sliced tomato and half of the goat cheese to the center of the omelet.
  4. Fold in half, cook for another few minutes, and then serve.

Grilled Eggplant and Chickpea

Ingredients:

  • 1/4 cup of butter
  • 4 eggs
  • 1 eggplant
  • 1/2 cup of chickpeas
  • 2 tablespoons of olive oil

Instructions:

  1. Grill the eggplant in a roasting tin for 30 minutes, until softened.
  2. In an iron pan, melt half of the butter over a medium heat.
  3. Add two whisked eggs, don’t stir the mix but gently move the pan.
  4. As the omelet starts to cook on the bottom, add strips of grilled eggplant, a handful of chickpeas, and a drizzle of olive oil to the center of the omelet.
  5. Fold in half, cook for another few minutes, and then serve.
