A lot of people are turned off by chicken, because it can be bland, dry, and generally disappointing. To make up for it, they often over-spice it or try to do too much. However, if you get some high-quality bone-in skin-on thighs, you can make some of the tastiest chicken with a cast iron pan and just 3 more ingredients.
Ingredients
- Bone-in Skin-on Chicken Thighs
- Olive Oil
- Salt
- Pepper
Instructions
- Pat chicken dry with a paper towel.
- Using a sharp knife, make two crosswise slits on the skin side of each thigh.
- Season chicken generously with salt and pepper.
- Heat olive oil in cast iron or stainless-steel pan on high heat.
- Once oil is smoking, add thighs to the pan, skin side down.
- Leave chicken undisturbed and allow to cook for 5-7 minutes, until skin is crispy and chicken can be lifted from pan without resistance.
- Flip chicken thighs over.
- Reduce heat to medium or medium low.
- Let chicken cook until internal temperature reaches 160 Fahrenheit.
- Remove chicken from pan, place on a plate and cover with foil for 5-10 minutes, until chicken reaches 165-170 Fahrenheit.
