If you’ve just gotten home from a long day at the office, then you probably don’t feel like slaving away in the kitchen. Fortunately, you don’t have to. Here are some quick and easy recipes that you can prepare using just your microwave.

Mac & Cheese

Place your macaroni in a large bowl and grate some cheese over it. Then, pour a generous amount of cooking liquid into the mix. Place some cling wrap over the bowl and poke holes in it before placing it in the microwave. Continue to microwave the bowl until the pasta is cooked.

Cauliflower Cheese

Cut one large cauliflower into bite-sized pieces. Place the pieces in a microwave-friendly bowl and add 150 grams of cheddar cheese. Drizzle it with some hot English mustard, whole milk, and thyme leaves before microwaving for eight minutes.

Scrambled Eggs

What is your go-to when youโ€™re looking for a sweet treat that isnโ€™t hard to make? Weโ€™ve been opting for mug brownies more and more recently, as weโ€™ve discovered just how easy and quick it is to make these delicious treats. Would you like to learn how to make these yourself? Hereโ€™s a simple recipe to follow!

Ingredients:

  • ยผ cup flour
  • 3 tablespoons white sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons whole milk
  • 2 tablespoons vegetable oil
  • A pinch of salt
  • Chocolate chips (optional)

Instructions:

  1. Start off by combining the flour, white sugar, salt, and cocoa powder in a 12-ounce coffee mug.
  2. Stir together thoroughly, being sure the mixture does not produce clumps and is completely smooth.
  3. If you want to add a few chocolate chips, do so after mixing the other dry ingredients together.
  4. Next, add the whole milk and vegetable oil and whisk together. Again, be sure there are no big clumps in the batter and the mixture is relatively even and consistent. It should be thick, but still easy to mix.
  5. Place in your microwave and start off by microwaving for 1 minute.
  6. Take it out and check to see if the brownie is completely cooked through, and if not, microwave in 15-30 second intervals until it is. It shouldnโ€™t take any longer than 2 minutes.
  7. Enjoy!

A vegan diet doesn’t have to mean green salads and plates heaped with vegetables. You can make delicious vegan dishes with minimum fuss.

Here are 3 deliciously vegan dishes you can make at home.

Spicy Tofu Fajitas

Fry triangles of tofu in olive oil for 3-4 minutes in a pan until brown on all sides. Add chopped onion and peppers to the pan and stir-fry for 3 minutes. Stir in spices, kale and tomatoes and season with salt and lots of black pepper. When the tomatoes are soft, pile in the mix to warm tortillas and serve with yogurt, coriander and lime juice.

Fragrant Noodle Bowl

Mix miso paste with 750ml boiled water, soy sauce and lemongrass and leave the dry noodles to brew in it. Stir fry eggplants, cashews, spring onions, ginger and garlic in coconut oil. Mix in the miso stock, noodles and lemongrass. Bring the broth to a simmer and cook for 2 minutes. Top with tofu and sprinkle with coriander.

Carrot and Sweetcorn Fritters

Mix carrots, sweetcorn, gram flour, spring onions, ginger, chili, seeds, garam masala and a good pinch of salt and pepper in a bowl. Mix well and leave to stand for 5 minutes to make a batter. Flatten some into a fritter and fry in coconut oil for 3 minutes on each side over a medium heat. Serve with coconut yogurt and mint leaves.

If you’re on a low carb diet and looking for delicious meals that can be made in minutes, then you’ve come to the right place. Cutting out carbs can have many health benefits, but it doesn’t have to mean bland food.

Here are 2 tasty low-carb dinner ideas.

Salmon Tray Bake

Preheat oven to 230C. Mix lime juice, soy sauce and sugar together until the sugar dissolves. Coat 2 salmon fillets in the mixture and leave to soak skin side up for 10 minutes. Then put the fillets into a greased roasting tin skin side down with broccoli, green beans and peppers. Pour over soy sauce and cover loosely with tin foil. Roast for 12 minutes.

Meanwhile, make a dressing with garlic, ginger, spring onions, chili, lime juice, soy sauce, olive oil, and sugar in a small jug. Spoon the dressing onto the roasted vegetables and salmon and serve.

Tofu Tikka Skewers

Mix non-dairy yogurt, garam masala and tomato puree in a bowl. Add tofu and mix together. Thread skewers with marinated tofu, red and green peppers, red onion and garlic. Brush the skewers with olive oil and grill on a high heat for 3-5 minutes on each side. When the skewers are nicely charred and cooked through, serve with a yogurt dip, salad and lemon wedges.

Tofu Tikka Skewers ๐Ÿข โ€ข โ€ข Tofu chunks marinated in a soya yoghurt spice mixture and then assembled onto a skewer and baked for 20 mins. Delicious ๐Ÿ˜ these were so fun to make and enjoyed by all – non vegans included! ๐Ÿฅณ I served with some asparagus, cherry tomatoes, avocado and a spiced rice – for the rice I mixed in some diced red onion, bell pepper, turmeric and smoked paprika. It was so yum! ๐Ÿ˜ โ€ข โ€ข Ingredients: 1. Block of firm tofu 2. 200g plain soya yoghurt 3. 1 tsp cumin 4. 1 tsp ground coriander 5. 1 tsp smoked paprika 6. 1 tsp turmeric 7. 1 tsp tamari 8. 0.5 tsp garlic powder 9. 0.5 tsp cayenne 10. Diced scallions & fresh coriander 11. Salt & pepper โ€ข โ€ข Method: 1. First you need to press as much liquid as possible out of the tofu using kitchen roll. Chop the tofu into small cubes. 2. Add the yoghurt and spices into a big bowl and mix until everything is combined. 3. Add the tofu chunks into the spices yoghurt mixture, using your hands, coat the tofu pieces in the sauce. 4. Add in the fresh coriander and scallions, give it another mix. Cover with clingfilm and leave to sit in the marinade for 2 hours. 5. Once the 2 hours are up, preheat the oven to 200 celsius. 6. Place the tofu, some red pepper chunks and red onion chunks onto the skewers. This should make 5 skewers. 7. Place on a baking tray and add any leftover marinade. Bake for 20 minutes. 8. Mix 2 tablespoons white miso with 2 tablespoons tahini and 1 tablespoon water in a bowl to make a spreadable paste. Toast 4 slices of sourdough bread and top with miso spread, smoked salmon, cucumber and sesame seeds.

Thank you! ๐Ÿค— grateful to @halfbakedharvest who inspires me to photograph savoury food ๐Ÿฅฐ Mushroom soup with wild rice: 2 T of olive oil 3 shallot, diced. 1 medium carrot, peeled & chopped. 1 celery stick, chopped. 1 Tblspn of garlic paste 1 tsp of onion powder 2 cubes of veg bouillon 1 tsp of tomato paste 1 T of lemon juice 1/2 tsp of salt 2 bay leaves 1 tsp of dried parsley. 1 tsp of white miso paste. A pinch of pepper 1 cup of wild rice. 1/4 tsp of paprika. 4 cups of vegetable stock or water. 3 Tbspn of coconut cream. 10 shiitake mushrooms, either sauteฬed sep or in the pan. Method: 1. In a medium pan, drizzle olive oil over medium low heat. 2. Place your shallots, carrot & celery in pan. Let it cook until soft. 3. Add your other ingredients, including mushrooms, but not coconut cream and rice & bring to a boil. Stir often. Cover, reduce to low for a few minutes. Add rice. 4. Take off heat & let it sit for an additional 30 mins to allow the rice to cook. Remove bay leaves, stir in your coconut cream & serve immediately. Sprinkle some dairy free Parmesan. Taste & add salt etc. Enjoy! Hey guys, hope youโ€™re all feeling as fabulous as I am after making this tasty lamb dish. ๐Ÿ˜Š๐Ÿ™Œ๐Ÿพ – Lamb steak with Garlic Mint Sauce & Mashed potato – This is probably the 2nd dish Iโ€™ve posted on here that features red meat. I barely have it because my body finds it hard to digest generally. However, Lamb seems to have more mercy on me than other meats tbh, and quite frankly beef is the worst but weโ€™ll leave that story for another day. ๐Ÿ˜‚ ~ Last week, sadly I had to say my goodbyes to someone who meant the world to me and took care of me as a young child. No one and I mean NO ONE, could ever cook a lamb dish the way he did. His lamb chops, for instance… The way it would just sit in a pool of its herby flavoursome juices, and fall off the bone so effortlessly was just always perfect. I really miss him and today I thought to try and make some banging lamb chops as my way of finding comfort and doing something to remember him by.โค Unfortunately all @tescofood had was lamb steaks. I settled with it though because it is still lamb…๐Ÿคท๐Ÿพโ€โ™€๏ธ I wanted to make my own mint sauce but then I came across a lamb chop with garlic mint sauce recipe online by @jocooks. I wish I had all the ingredients for the sauce, but I literally used what I had without substituting the ones I didnโ€™t have. I used: Minced Garlic Chopped Mint Chilli flakes Dark soy sauce 2 tbsps sunflower oil Salt Pepper Guys let me tell you, this plate went in a hurry. The flavours from the garlic mint sauce really went well with the lamb. To prepare the batter, you will need to beat the three egg whites, the sugar and the corn starch into a mixing bowl. Add each ingredient one at a time. If you want food dye or extracts like chocolate or vanilla, you should also add them at this point.

Beat and Bake the Batter

The batter is ready when the mixture is thick and fluffy. It should form soft peaks before you continue. When the batter’s ready, arrange it on a greased baking tray in the form of a loaf. Bake for 25 minutes in the oven at 300ยฐF.

What is your go-to when youโ€™re looking for a sweet treat that isnโ€™t hard to make? Weโ€™ve been opting for mug brownies more and more recently, as weโ€™ve discovered just how easy and quick it is to make these delicious treats. Would you like to learn how to make these yourself? Hereโ€™s a simple recipe to follow!

Ingredients:

  • ยผ cup flour
  • 3 tablespoons white sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons whole milk
  • 2 tablespoons vegetable oil
  • A pinch of salt
  • Chocolate chips (optional)

Instructions:

  1. Start off by combining the flour, white sugar, salt, and cocoa powder in a 12-ounce coffee mug.
  2. Stir together thoroughly, being sure the mixture does not produce clumps and is completely smooth.
  3. If you want to add a few chocolate chips, do so after mixing the other dry ingredients together.
  4. Next, add the whole milk and vegetable oil and whisk together. Again, be sure there are no big clumps in the batter and the mixture is relatively even and consistent. It should be thick, but still easy to mix.
  5. Place in your microwave and start off by microwaving for 1 minute.
  6. Take it out and check to see if the brownie is completely cooked through, and if not, microwave in 15-30 second intervals until it is. It shouldnโ€™t take any longer than 2 minutes.
  7. Enjoy!

A vegan diet doesn’t have to mean green salads and plates heaped with vegetables. You can make delicious vegan dishes with minimum fuss.

Here are 3 deliciously vegan dishes you can make at home.

Spicy Tofu Fajitas

Fry triangles of tofu in olive oil for 3-4 minutes in a pan until brown on all sides. Add chopped onion and peppers to the pan and stir-fry for 3 minutes. Stir in spices, kale and tomatoes and season with salt and lots of black pepper. When the tomatoes are soft, pile in the mix to warm tortillas and serve with yogurt, coriander and lime juice.

Fragrant Noodle Bowl

Mix miso paste with 750ml boiled water, soy sauce and lemongrass and leave the dry noodles to brew in it. Stir fry eggplants, cashews, spring onions, ginger and garlic in coconut oil. Mix in the miso stock, noodles and lemongrass. Bring the broth to a simmer and cook for 2 minutes. Top with tofu and sprinkle with coriander.

Carrot and Sweetcorn Fritters

Mix carrots, sweetcorn, gram flour, spring onions, ginger, chili, seeds, garam masala and a good pinch of salt and pepper in a bowl. Mix well and leave to stand for 5 minutes to make a batter. Flatten some into a fritter and fry in coconut oil for 3 minutes on each side over a medium heat. Serve with coconut yogurt and mint leaves.

If you’re on a low carb diet and looking for delicious meals that can be made in minutes, then you’ve come to the right place. Cutting out carbs can have many health benefits, but it doesn’t have to mean bland food.

Here are 2 tasty low-carb dinner ideas.

Salmon Tray Bake

Preheat oven to 230C. Mix lime juice, soy sauce and sugar together until the sugar dissolves. Coat 2 salmon fillets in the mixture and leave to soak skin side up for 10 minutes. Then put the fillets into a greased roasting tin skin side down with broccoli, green beans and peppers. Pour over soy sauce and cover loosely with tin foil. Roast for 12 minutes.

Meanwhile, make a dressing with garlic, ginger, spring onions, chili, lime juice, soy sauce, olive oil, and sugar in a small jug. Spoon the dressing onto the roasted vegetables and salmon and serve.

Tofu Tikka Skewers

Mix non-dairy yogurt, garam masala and tomato puree in a bowl. Add tofu and mix together. Thread skewers with marinated tofu, red and green peppers, red onion and garlic. Brush the skewers with olive oil and grill on a high heat for 3-5 minutes on each side. When the skewers are nicely charred and cooked through, serve with a yogurt dip, salad and lemon wedges.

Tofu Tikka Skewers ๐Ÿข โ€ข โ€ข Tofu chunks marinated in a soya yoghurt spice mixture and then assembled onto a skewer and baked for 20 mins. Delicious ๐Ÿ˜ these were so fun to make and enjoyed by all – non vegans included! ๐Ÿฅณ I served with some asparagus, cherry tomatoes, avocado and a spiced rice – for the rice I mixed in some diced red onion, bell pepper, turmeric and smoked paprika. It was so yum! ๐Ÿ˜ โ€ข โ€ข Ingredients: 1. Block of firm tofu 2. 200g plain soya yoghurt 3. 1 tsp cumin 4. 1 tsp ground coriander 5. 1 tsp smoked paprika 6. 1 tsp turmeric 7. 1 tsp tamari 8. 0.5 tsp garlic powder 9. 0.5 tsp cayenne 10. Diced scallions & fresh coriander 11. Salt & pepper โ€ข โ€ข Method: 1. First you need to press as much liquid as possible out of the tofu using kitchen roll. Chop the tofu into small cubes. 2. Add the yoghurt and spices into a big bowl and mix until everything is combined. 3. Add the tofu chunks into the spices yoghurt mixture, using your hands, coat the tofu pieces in the sauce. 4. Add in the fresh coriander and scallions, give it another mix. Cover with clingfilm and leave to sit in the marinade for 2 hours. 5. Once the 2 hours are up, preheat the oven to 200 celsius. 6. Place the tofu, some red pepper chunks and red onion chunks onto the skewers. This should make 5 skewers. 7. Place on a baking tray and add any leftover marinade. Bake for 20 minutes. 8. Thank you! ๐Ÿค— grateful to @halfbakedharvest who inspires me to photograph savoury food ๐Ÿฅฐ Mushroom soup with wild rice: 2 T of olive oil 3 shallot, diced. 1 medium carrot, peeled & chopped. 1 celery stick, chopped. 1 Tblspn of garlic paste 1 tsp of onion powder 2 cubes of veg bouillon 1 tsp of tomato paste 1 T of lemon juice 1/2 tsp of salt 2 bay leaves 1 tsp of dried parsley. 1 tsp of white miso paste. A pinch of pepper 1 cup of wild rice. 1/4 tsp of paprika. 4 cups of vegetable stock or water. 3 Tbspn of coconut cream. 10 shiitake mushrooms, either sauteฬed sep or in the pan. Method: 1. In a medium pan, drizzle olive oil over medium low heat. 2. Place your shallots, carrot & celery in pan. Let it cook until soft. 3. Add your other ingredients, including mushrooms, but not coconut cream and rice & bring to a boil. Stir often. Cover, reduce to low for a few minutes. Add rice. 4. Take off heat & let it sit for an additional 30 mins to allow the rice to cook. Remove bay leaves, stir in your coconut cream & serve immediately. Sprinkle some dairy free Parmesan. Taste & add salt etc. Enjoy! Salads

To make fresh salads, simply chop onions, tomatoes and avocado in the processor. Then shred lettuce. Mix ingredients in the processor with olive oil, olives, feta cheese and balsamic vinegar. Serve in salad bowl.

Hey guys, hope youโ€™re all feeling as fabulous as I am after making this tasty lamb dish. ๐Ÿ˜Š๐Ÿ™Œ๐Ÿพ – Lamb steak with Garlic Mint Sauce & Mashed potato – This is probably the 2nd dish Iโ€™ve posted on here that features red meat. I barely have it because my body finds it hard to digest generally. However, Lamb seems to have more mercy on me than other meats tbh, and quite frankly beef is the worst but weโ€™ll leave that story for another day. ๐Ÿ˜‚ ~ Last week, sadly I had to say my goodbyes to someone who meant the world to me and took care of me as a young child. No one and I mean NO ONE, could ever cook a lamb dish the way he did. His lamb chops, for instance… The way it would just sit in a pool of its herby flavoursome juices, and fall off the bone so effortlessly was just always perfect. I really miss him and today I thought to try and make some banging lamb chops as my way of finding comfort and doing something to remember him by.โค Unfortunately all @tescofood had was lamb steaks. I settled with it though because it is still lamb…๐Ÿคท๐Ÿพโ€โ™€๏ธ I wanted to make my own mint sauce but then I came across a lamb chop with garlic mint sauce recipe online by @jocooks. I wish I had all the ingredients for the sauce, but I literally used what I had without substituting the ones I didnโ€™t have. I used: Minced Garlic Chopped Mint Chilli flakes Dark soy sauce 2 tbsps sunflower oil Salt Pepper Guys let me tell you, this plate went in a hurry. The flavours from the garlic mint sauce really went well with the lamb. Here are the basics steps, so you can try making cloud bread yourself. Once you have mastered this recipe, you can get a bit more creative with colors and flavors.

Gather Ingredients

Cloud bread is extremely simple to make and only requires three kinds of ingredients: 3 egg whites, 30g sugar and 10g corn starch. If you want additional flavors or food coloring, you will also need to find these.

Prepare Batter

To prepare the batter, you will need to beat the three egg whites, the sugar and the corn starch into a mixing bowl. Add each ingredient one at a time. If you want food dye or extracts like chocolate or vanilla, you should also add them at this point.

Beat and Bake the Batter

The batter is ready when the mixture is thick and fluffy. It should form soft peaks before you continue. When the batter’s ready, arrange it on a greased baking tray in the form of a loaf. Bake for 25 minutes in the oven at 300ยฐF.
