Finding time to cook during the week can prove difficult between work and looking after the kids. Fortunately, there is a filling and scrumptious pasta recipe that takes less than an hour to prepare. Here is your guide to making a Spaghetti All’Assassina that will be perfect for weeknight dinners.

Ingredients:

  • 8 ounces spaghetti
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 2 cups chicken broth
  • 3 cups tomato puree
  • 4 cloves garlic
  • 5 tablespoons olive oil

Instructions:

  1. Heat a skillet of oil over medium heat. Add the garlic and red pepper flakes and cook for 2 to 3 minutes, until the garlic begins to soften. Add tomato paste and cook for 1 more minute.
  2. Pour the broth and the puree into a bowl. In the skillet, lay down the spaghetti and turn the heat to medium-high. Add 1 cup of broth and cook for 4 to 5 minutes, until there is a thickened paste around the spaghetti and at the bottom of the skillet.
  3. As the spaghetti begins to burn and stick to the skillet, use a spatula to lift it. Add another cup of broth and more salt to the pasta. Cook for another 25 to 30 minutes, until the pasta is al dente and the sauce is thickened.

Homemade pasta is really a delight, and with a stand mixer, it couldn’t be easier to make!

Ingredients:

  • 1 1/2 cups of semolina flour
  • 1 1/2 cups of all-purpose flour
  • 4 room temperature eggs, slightly beaten 
  • 4 tablespoons of olive oil
  • 4 tablespoons of water
  • 1 teaspoon of salt

Instructions:

  1. If you have a stand mixer, put the semolina, all-purpose flour, beaten eggs, water, salt and oil into the bowl with the dough hook attached. If not, you can do this all by hand. 
  2. Knead on medium speed until the dough forms a ball, which can take a few minutes so keep an eye on it. 
  3. However, if your dough seems too sticky, add more semolina and for the opposite problem of being dry, add water. 
  4. The dough is ready when you can put your finger into it and have it spring back instead of being sticky. 
  5. Then, cover the dough for 30 minutes in a bowl, or just with cling film and allow it to rest. 
  6. Roll out the dough on a lightly floured surface into a large sheet, and cut out whatever shapes you like best. 
  7. Finally, boil some water, salt it well, and cook the pasta for 3-5 minutes and you’re set!
