Tortillas

Mexican cuisine wouldn’t be the same without tortillas. They are used for tacos, quesadillas, enchiladas, and more. There are different types of tortillas and it’s crucial to choose the right one if you want your dish to be a success.

Spices

Just like any other cuisine, Mexican cuisine has its own set of spices that help complete the flavor. Among them are cumin, coriander, garlic powder, cinnamon, chili powder, etc.

Chili Peppers

Most dishes from Mexican cuisine use at least one type of chili pepper, and some use more of them. Varieties include jalapenos, habaneros, serranos, etc. They can go into virtually any Mexican dish and only improve it.

Beans

Beans provide a great protein base for many dishes. You can use black or pinto beans and always get the right flavor. Beans are especially great for side dishes. Try dishes like refined beans or frijoles de olla (Mexican pinto beans).

Unknown to many who haven’t spent time in the country, Mexico is a place that has a wealth of delicious cheeses to try. While most of us might only be familiar with the strange, melted, yellow cheese-like substance found on “nachos”, the reality of this country’s cheeses couldn’t be any further from this. If you get the chance, be sure to check out these three Mexican cheeses.

Cotija

Cotija is a cheese made with cow’s milk that hails from the state of Michoacan. This cheese is typically sold aged, making it a hard, crumbly cheese with a salty taste and a texture similar to that of parmesan. It’s great on Mexican street corn and salads.

Añejo

Añejo is a goat’s milk cheese which is semi-hard and served after being aged, just like cotija. However, this cheese typically has a milder flavor and is infused with the taste of smoked paprika, making it perfect for baked dishes like enchiladas.

Oaxaca

This soft, moist cheese is a favorite in Mexico due to its relatively neutral taste and overall versatility. Oaxaca can be found in quesadillas especially, as its pleasant texture and gooey character after being melted makes it a popular choice for dishes involving melted cheese.

They say breakfast is the most important meal of the day. So why not start your morning off right with this amazing savory Mexican-style breakfast. Huevos rancheros will be your new go-to recipe!

Happy Cinco de Mayo! We are starting out our day with this beautiful mess! Sheet-pan Huevos Rancheros with all the fixings so that everyone can ‘make their own’ : : : : Preheat broiler. Lay 6 corn tortillas down on sheetpan and brush with oil. Broil for 1-2 minutes or y til just starting to turn golden. Remove from over and preheat to 400F. Spread a layer of refried beans down. Add some Ranchero sauce. Create a little divot in the Beans so the the Egg has a place to rest. Carefully crack the egg into the center of the tortilla. Bake for 10 minutes or until eggs are set. Top with extra ranchero sauce, avocado, sour cream, jalapeños and cilantro. : : : : Sheet-pan Huevos Rancheros : : : : : : Ranchero Sauce 1 tbls olive oil 1/4 cup peeled and chopped onion 2 cloves garlic chopped 1 can (15oz) tomato sauce 1 jar (12oz) Roasted Peppers 1 can (4.5oz) green chiles 1 cup chicken stock 1 tbls cumin 1/3 tsp smoked paprika 1/4 tsp cayenne 1/2 tsp salt 1/4 tsp black pepper 1 tbls brown sugar 1/4 teaspoon liquid smoke 1/2 cup heavy cream * Sauté up onion and garlic in olive over medium heat in a medium sized pot for 2-3 minutes. Add all remaining ingredients, except for the heavy cream. Simmer the ranchero sauce for 10 minutes. Remove from heat. Using an immersion blender, puree the ranchero sauce until smooth. Then stir in the heavy cream. Ingredients:

  • 1 can of whole peeled tomatoes
  • 1/4 cup of cilantro
  • 1/4 cup of diced onion 
  • 1 clove of garlic
  • 1 jalapeno pepper
  • 5 oz of diced chorizo 
  • Corn tortillas 
  • 1 can of refried beans
  • 4 eggs 
  • 1 diced or sliced avocado 
  • 3/4 cup of queso fresco or the cheese of your choice
  • Vegetable oil 
  • Salt and pepper to your taste

Instructions:

  1. In a high-speed blender or food processor pour in the whole peeled tomatoes, onions, cilantro, garlic, jalapeno, and 1/2 teaspoon of salt. 
  2. Blend until smooth and then pour it into a skillet to simmer for 10-15 minutes over medium heat. 
  3. Turn it down to low while you make the rest of the ingredients. 
  4. In another skillet, fry the chorizo until brown and put it into the sauce.
  5. Pour 1 tablespoon of oil into the large skillet and fry the tortillas for 30 seconds on each side, adding more oil if you need to. 
  6. Heat up refried beans in the large skillet and then put them over the tortillas. 
  7. Finally, add more oil to the large skillet and fry the eggs. 
  8. To assemble, put the tortillas with the beans down first, followed by the eggs, the sauce, and finally top with avocado and cheese! Enjoy!
