Ingredients:

  • 2 cups of shredded cooked chicken (leftover rotisserie or roasted chicken works well)
  • 8 cups of chicken broth
  • 1 cup of sliced carrots
  • 1 cup of celery
  • 1 cup of onion
  • 4 cloves of garlic
  • 2 cups of egg noodles
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt
  • Black pepper
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onions, celery, and carrots. Sauté until the vegetables are softened, about 5 minutes.
  2. Add minced garlic and continue to sauté for an additional minute until fragrant. Pour in the chicken broth, and bring the mixture to a gentle boil. Stir in the shredded chicken, dried thyme, bay leaf, salt, and pepper. Reduce the heat to simmer, allowing the flavors to meld for at least 15 minutes.

Listen, we think everyone is sick of being told to use their leftover rice to make fried rice. Been there and done that (maybe hundreds of times). So, what is another way you can repurpose the leftover rice in your fridge? Believe it or not, there are other methods and one of our favorites is to make crispy rice! 

Crispy rice is a great way to repurpose leftover rice because it completely changes the texture and flavor, so it feels like you’re eating a completely new dish instead of just leftovers. This delicious rice recipe can be eaten on its own, dipped in your favorite sauces, or even underneath some fish for a make-your-own sushi kinda thing! 

Ingredients:

  • Leftover rice
  • 2 tablespoons olive oil

Instructions:

  1. Pack leftover rice into a 1-inch thick patty. You can do this in a small pan or even on a plate.
  2. Cut the patty into squares or rectangles in the size you want your crispy rice to be. We recommend 1-2 inch sections.
  3. Heat the olive oil in a frying pan.
  4. When the oil is hot, place the rice into the pan and fry until golden brown. Flip and repeat. 
  5. Remove from the pan and enjoy!

Covering a tray or a plate of leftover food with aluminum foil is pretty common, but it’s not an ideal solution. Perhaps you didn’t know that you shouldn’t use aluminum foil for this purpose, but it’s true. It’s also not a good idea to wrap the food in the foil and just toss it in the fridge. Here’s why.

Understanding Aluminum

Leftovers quickly develop bacteria, especially when left out of the fridge. Some bacteria produce toxins that can mess up your health, and this all happens when food has contact with air. When you cover the leftovers with aluminum foil, you’re still allowing air to get in contact with it. It may look sealed, but it’s definitely not unless you’re using the right containers. So what should you use instead?

Shallow, air-tight containers are your best choice. They allow food to cool down quickly once it’s in the fridge. Always remember to store it within two hours of making it so you can avoid the bacteria reproducing. This is especially important for dairy and meat.

If you forgot about the food and left it outside the fridge for longer than two hours, throw it out. If you made more food than you can safely store in the fridge, portion it in the same air-tight containers and keep in the freezer.

Everyone is preparing their menus for Thanksgiving and planning out how they can make sure everyone is good and full. But, inevitably, there are leftovers of all sorts. If you want some creative ways of how to use all that food, this is the guide for you.

Stock

Most people have a whole turkey at their Thanksgiving, and by the end of the night, you might have some left, or you might just have the bones. If you do have bones, you can easily make a stock. All you have to do is boil all the bones in water with any other vegetables and herbs you have left over until the flavor infuses, and you have homemade stock that is super healthy and delicious! You can also add in the meat if you are tired of turkey for a rich broth.

Mashed Potatoes

If you have leftover mashed potatoes but you’re growing tired of them, instead of just reheating them, turn them into mashed potato balls! Combine the potatoes in a bowl with bacon, cheese, onion, and eggs. Mix everything together and shape it into balls. Roll the balls in breadcrumbs and pan-fry them until golden brown. Serve with your favorite dipping sauce.
