Willow Smith may have whipped her hair back and forth back in the day, but we’re all about whipping something else—feta. Feta is a fantastic addition to salads and pasta dishes as the Greek cheese is both crumbly and creamy at the same time. While we adore feta in its natural form, whipped feta is our new favorite.

Ingredients

• 8 ounces quality feta, drained
• ¾ cup Greek yogurt
• 2 tablespoons of extra virgin olive oil
• 1 teaspoon of red pepper flakes
• 2 tablespoons of chopped fresh mint
• 2 tablespoons of chopped fresh parsley
• 2-3 tablespoons of toasted pine nuts
• 1-2 tablespoons crushed pistachios
• Lemon zest

Instructions

  1. Blend the feta, Greek yogurt, and lemon zest in a blender or food processor. While the processor is running, drizzle olive oil through the top opening until the feta is whipped to a smooth mixture.
  2. Transfer the whipped feta to a serving plate. With the back of your spoon, smooth the top of the feta, making an indentation in the center. Pour some olive oil all over the feta, then top with the red pepper flakes, fresh herbs, and nuts.
  3. Serve with pita chips or pita wedges, on a salad, or on toast—however you’d like!

Zucchinis are one of the most versatile veggies on the market, and just when we think we’ve seen it all—another delicious recipe enters the scene. If you still haven’t tried zucchini rolls—now’s the time! And the choice of stuffings is pretty much endless.

This recipe is a perfect fit for all the cheese lovers out there, because zucchinis are filled with crumbled feta and cream cheese this time around. Once you master this recipe, the sky is the limit, because you’ll know how to fill zucchini rolls with other ingredients of your choosing.

Ingredients

  • 1 bell pepper
  • 30 g crumbled feta
  • 100 g cream cheese
  • 400 g zucchini
  • salt and pepper
  • olive oil
  • chopped parsley

Instructions

  1. Cut two medium-sized zucchini lengthwise into thin slices and set them aside to release excess water.
  2. Coat the zucchini slices with olive oil and grill them for about two minutes on both sides until golden brown. Drizzle some salt and pepper to taste and set them aside to cool down.
  3. Cut the bell pepper into tiny cubes and whisk them with your cream cheese and crumbled feta.
  4. Fill the zucchini slices with feta mixture on one side, and assemble them into rolls. Pierce a toothpick through the middle of zucchini rolls to keep them in shape.
  5. Garnish your rolls with some chopped parsley and serve while fresh.
