If you can’t imagine your life without sweet treats, but still want to lead a healthy lifestyle, dark chocolate is the way to go. You can make it even better by adding a couple of superfoods to the mix and baking delicious home-made chocolate bars.

That’s exactly the idea behind this recipe for chocolate superfood bars that food blogger Anita aka breakfastnbowls shared with over 50.000 of her Instagram followers. She described them as super crunchy, healthy and easy to make, and we couldn’t agree more.

CHOCOLATE SUPERFOOD BARS for a SUPER MONDAY 💛❤💚 Are you with me? These super crunchy, easy, healthy and yummy bars are here for you! And they wish you a great week! 💪🏻 Much love, Anita. 𝗥𝗲𝗰𝗶𝗽𝗲 for 12 bars BASE * 1/2 cup (125ml) gluten free rolled oats * 1/2 cup (125ml) quinoa puffs * 1/3 cup (80ml) almonds, chopped * 1/3 cup (80ml) hazelnuts, chopped * 1/4 cup (60ml) pumpkin seeds, chopped * 1/4 cup (60ml) flax meal * 1 tbsp chia seeds * 1/3 cup (80ml) maple syrup * 1 tbsp coconut oil, melted * Pinch of sea salt Preheat oven to 180°C (350°F). Line a 20x20cm (8×8 inch) baking pan with parchment paper. Combine all dry ingredients in a large bowl. In a small bowl, whisk maple syrup and coconut oil. Ingredients (12 bars):

Base

  • 1/2 cup (125ml) gluten-free rolled oats
  • 1/2 cup (125ml) quinoa puffs
  • 1/3 cup (80ml) almonds, chopped
  • 1/3 cup (80ml) hazelnuts, chopped
  • 1/4 cup (60ml) pumpkin seeds, chopped

For those that know of Earth Day, it shouldn’t be just one single day that we keep the Earth in our thoughts. Every action you make can leave a positive or negative mark on the world. I have chosen to do everything I can to minimize harm to the Earth. And while I am no where near perfect and still making mistakes along the way, I want to do my best to learn more and more about the things I can do to minimize the damage already done. 🌼 . I made a choice almost 9 years ago to go vegan. Originally, that choice was specifically for health. As time has gone on, I realized what a powerful choice that was. Even past the ethical side, it’s probably one of the least harmful to the environment around us. 🌱Food production, water, hunger, deforestation, ocean life, etc…its all heavily impacted by the choices on our plate. And while I’m not expecting everyone to go vegan, I hope that this is an encouragement for you to consider accepting more plants in your life, become informed about the environment and practices that impact the Earth, make more conscious decisions towards your health, learn more empathy towards yourself and others, and become active members of the solution. That can look like replacing meat with a serving of plant based protein options, being involved with the political scene and making sure that individuals making it into office care about our planet, choosing reusable containers, packing your own lunch…really almost anything. Remember that every small move absolutely counts. ♻ . For dinner tonight decided on some sweet baked plantains, broccoli, baked tempeh, avocado, greens and zucchini. I made my tempeh by dicing 1/3 of a block of tempeh into cubes and tossing it together with 1/2 tbsp soy sauce, 1/2 tsp sriracha, 1 tsp nutritional yeast, 1 tsp maple syrup. 👌🏽
