Award-winning recipe creator Melissa Stadler was born to cook, literally speaking. As a toddler, she recalls standing on the tallest step stool, begging her Mom to let her help out in the kitchen.

“I watched my Mom and Grandma spend their days baking for their families, and it was then I discovered that making food is a wholehearted expression of love,” she writes on her website.

With an inherent passion for food and cooking, Stadler launched Modern Honey in 2015 as an outlet for her creativity in the kitchen. On her viral platform, she shares tried and true recipes from decadent desserts (Stadler herself is a two-time Pillsbury Bake-Off finalist), quick and easy dinners, and healthy recipes.

With an emphasis on baking, Stadler is a self-proclaimed cookie junkie. “There’s probably a support group somewhere for people like me,” she jokes on her website, recalling how when she was a teenager, she would go to the library and thumb through cookbooks to find every single chocolate chip cookie recipe and would beg her Mom to try out the recipe creations almost daily. “Issues, I tell you,” she writes.

One of her most celebrated recipes in the Famous Levain Bakery Chocolate Chip Cookie Recipe. “These aren’t some ordinary bite-size cookies,” writes Stadler. “No, these are a full-on meal. Toffee is such a nice treat and it tastes even better when you put them into a cookie! This recipe is a very basic cookie recipe but has a lot of flare.

Ingredients

  • 1 cup of unsalted butter
  • 2 cups of flour
  • 1 teaspoon of baking soda
  • 3/4 teaspoon of salt
  • 1 cup of packed brown sugar
  • 1/3 cup of white sugar
  • 2 room temperature eggs
  • 2 teaspoons of vanilla extract
  • 3 oz of toffee bars
  • 1 1/2 cups of chocolate wafers

Instructions

  1. Start by cooking the butter until it foams, stirring until it starts to brown, about 6 minutes or so, on medium heat. Put it into a big bowl to the side.
  2. In another bowl, mix the flour, baking soda, and salt.
  3. Add the sugars with an electric hand or stand mixer to the butter on medium. Beat for 1 minute.
  4. Put the eggs and vanilla into the mixer and put up the speed to medium-high for 1-2 minutes. Then, turn it back down to low and add in the dry ingredients. Finally, mix in the toffee and wafers in by hand.
  5. Leave out the dough for 30 minutes, use a scooper and space the cookies apart by 2-3 inches on a parchment-lined baking sheet.
  6. Bake at 375 F for 9-11 minutes cool and enjoy!

You will fall in love with these simple sablé from the moment you try this recipe.

Ingredients 

  • 2 1/4 cups of flour
  • 3/4 teaspoon of cardamom 
  • 3/4 teaspoon of kosher salt
  • 1/2 cup of sugar
  • 2 vanilla beans
  • 1 cup of room temperature unsalted butter
  • 1 egg
  • 1/4 cup of honey

Recipe

  1. Whisk the flour, cardamom, and salt in a medium-sized bowl and set to the side.  
  2. Scrape the seeds out of the vanilla beans and put them into a separate bowl along with the sugar. Use your fingers to mix the sugar and vanilla to make a sand-like texture and then add in the butter and mix on medium with a hand mixer until smooth. 
  3. Add in just the yolk of the egg as well as the honey to the butter-sugar bowl. Beat for 30 seconds then turn down the speed to low and add in half the dry ingredients. Mix to just combine before adding the other half. 
  4. Knead the dough for a couple of minutes by hand to make sure everything is incorporated.
  5. Divide the dough in half, make two 9-inch logs and wrap in parchment paper followed by in plastic wrap. Roll the logs on the counter to make sure they’re very round. 
  6. Put them in the fridge for 2 hours, unwrap, and cut the dough into circles.
  7. Put them onto a parchment-lined baking sheet and bake for 13-18 minutes at 350 F, making sure to rotate them halfway through. 
  8. Cool for 5 minutes on the tray, transfer to wire racks, and enjoy!
