Forget the bakery! These homemade cinnamon rolls are about to become your new breakfast (or dessert) obsession. They’re not for the faint of heart—buttery dough, gooey filling, and a rich, creamy frosting come together to create an indulgence unlike any other. Let’s dive in!

Ingredients:

Dough:

  • 1 cup warm milk (about 115°F)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/4 cup unsalted butter, softened
  • 3 1/2 cups all-purpose flour, plus extra for dusting
  • 1 teaspoon salt

Filling:

  • 3/4 cup packed light brown sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Frosting:

  • 4 ounces cream cheese, softened
  • 3 tablespoons unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions:

  1. Whisk warm milk, yeast, and sugar and let the mixture foam. Add eggs, melted butter, then flour and salt. Knead the mixture into a smooth dough. Then, let it rise until doubled. 
  2. In a small bowl, mix brown sugar and cinnamon. Set aside.
  3. Roll the risen dough, spread with butter, and top with sugar mix and vanilla. Roll up the dough and cut into slices.
  4. Place the rolls in a greased dish, and let rise for 30 min.
  5. Bake at 375°F for 20-25 minutes until golden. 
  6. In the meantime, beat cream cheese, butter, powdered sugar, maple syrup, and vanilla for frosting. 
  7. Cool rolls slightly, frost, and enjoy!

It sounds impossible, but sometimes pizza night ends up with leftovers. If you couldn’t get through all your balls of dough, here are some ways to use them up over the next few days without having to freeze them.

Make Pita Bread

Although pizza dough is slightly different than pita bread, you can still throw small circles of dough into a hot pan and watch them puff up into a pita-like item.

Breadsticks

Roll the dough into long cylinders, brush with olive oil, and heat in the oven for quick, easy, and delicious breadsticks. Bonus points if you have some pizza sauce leftover for dipping.

Cinnamon Rolls

Pizza dough makes surprisingly good cinnamon rolls. Simply shape the flattened dough into a roll, top with cinnamon and butter, and bake!

Calzones

Okay, so a calzone is pretty much just a pizza in a different shape, but really, but who can get sick of pizza? This is a great way to put a spin on your pizzas from the night before.

Garlic Knots

Who doesn’t love hot, fresh cinnamon rolls? These are fluffy and soft are you can make them overnight or freeze them. The cinnamon, brown sugar filling and vanilla glaze soaks the middle, making every bite oh so satisfying. If you can’t get enough Cinnabons, these will be your favorite new dessert. Get the recipe below.

Ingredients:

Dough:

  • 3/4 cup warm milk (whole milk or 2% is best at 110 F)
  • 2 1/4 teaspoons quick rise or active yeast
  • 1/4 cup granulated sugar
  • 1 egg plus 1 egg yolk, at room temperature
  • 1/4 cup unsalted butter, melted
  • 3 cups bread flour, plus more for dusting
  • 2/4 teaspoon salt

Filling:

  • 2/3 cup dark brown sugar
  • 1 1/2 tablespoons ground cinnamon
  • 1/4 cup unsalted butter, softened

Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • 3 tablespoons unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Warm the milk to around 110 F and transfer it to the bowl of an electric mixer and sprinkle the yeast on top.
  2. Add in the sugar, egg, egg yolk, and melted butter and mix well.
  3. Stir in the flour and salt with a wooden teaspoon until a dough forms.
  4. Place the dough on the stand mixer and knead it on medium speed for 8 minutes or you can use your hands to knead the dough for 8-10 minutes. The dough should form into a ball and be slightly sticky. If it’s too sticky, add in 2 tablespoons more of bread flour.
  5. Transfer the dough ball to a well-oiled bowl and cover it with plastic and a warm towel. Allow the dough to rise for 1-1 1/2 hours, until it’s doubled in size.
  6. After the dough has doubled in size, transfer the dough to a well-floured surface and roll it into a 14×19 inch rectangle.
  7. Spread butter over the dough, leaving a 1/4 margin at the far side of the dough.
  8. In a small bowl, mix the brown sugar and cinnamon. Use your hands to spread the mixture over the dough, then rub the brown sugar mixture into the dough.
  9. Roll the dough up tightly, starting from the 9-inch side and place seam side down, making sure to seal the edges of the dough.
  10. Cut into 1-inch sections with a serrated knife or floss. You should have 9 large pieces.
  11. Place the cinnamon rolls in a greased 9×9 inch baking pan or round 9-inch cake pan. Cover with plastic wrap and a warm towel, letting it rise for 30-45 minutes.
  12. Preheat the oven to 350 F. Remove plastic wrap and towel and bake cinnamon rolls for 20-25 minutes or until they are slightly golden brown on the edges. Allow them to cool for 5-10 minutes before frosting.
  13. For the frosting, in the bowl of an electric mixer, combine cream cheese, butter, powdered sugar, and vanilla extract. Beat until smooth and fluffy and spread over cinnamon rolls.
  14. Serve immediately and enjoy!
