You might have noticed that you can end up with significantly different chocolate chip cookies even if you always use the same recipe. This is probably because you are not using the same chill time and baking temperature.

Chill time and temperature can completely change the way your cookie looks, even if you are using the same dough. You only need to check out a viral video from TikTok user @bromabakery to learn all about it.

In order to help home bakers get the cookie they want at all times, @bromabakery decided to bake several variations of cookies with the same dough but using different chill times and temperatures.

Baking the cookies at 350F without chilling the dough leads to “crackling” cookies, while dough that has been chilled for 30 minutes and baked at 350F leads to “thicker, chewier cookies.” Frozen dough, on the other hand, doesn’t spread and results in a thicker cookie.

If you like thinner cookies, you will want to use smooshed dough. For crunchier and crispier cookies, chill the dough for 30 minutes and bake at 375F. Finally, chilling the dough for two hours and baking the cookies at 350F results in “chewy cookies with just the right amount of spread.”

One thing that has a big effect on your dough’s chewiness is its moisture content. More moisture will make your cookies chewier … to a point. You don’t want to add too much wetness or your cookies will run and spread, making them crunchy instead of chewy.

There are a few ways to add moisture. First, you can swap out some of the white sugar for brown sugar, which has molasses, or even add a teaspoon to a tablespoon or molasses or syrup if you need the white sugar. You can try using two yolks instead of a full egg, as the fatty yolks won’t dry out as fast as egg whites. Finally, you can try replacing some or all of the butter with shortening: butter has water that can evaporate in the oven, while shortenings full-fat makeup will retain its moisture better.

It’s autumn, which means it’s time for everything pumpkin spice. If you love chocolate chip cookies, this recipe adds the most popular fall spice to them. That way you get the best out of the season and of your favorite dessert.

Ingredients:

When you decide to make these delicious pumpkin chocolate chip cookies you have to grab:
1 teaspoon baking soda
1/2 teaspoon kosher salt
2 1/4 c. all-purpose flour
1 c. unsalted butter
3/4 c. brown sugar
1 teaspoon pumpkin pie spice
1 large egg
2 teaspoons vanilla extract
1/2 c. granulated sugar
3/4 c. pumpkin puree
2 c semi-sweet chocolate chips

How To Make Them:

The time you’ll need to make the pumpkin chocolate chip cookies is around 15 minutes for prep and an hour overall.

First, preheat the oven to 375°. Get a bowl and put the pumpkin spice, baking soda, flour, and salt in.

Grab a second one and place the butter and sugars in and mix them. Beat the eggs, pumpkin, and vanilla extract, then add the mixture in the first bowl. Beat until you get an even mixture.
