Are you a huge fan of no-bake cakes that you can prepare in a blink of an eye? If that’s the case, this delicious berry chia cheesecake will be right up your alley. Developed by the Australian food blogger Anthea of Rainbow Nourishments, this recipe is extremely practical in the summer, when no one feels like firing up their oven. You can prep it in just 15 minutes, before setting it aside in the fridge so it could freeze properly.

Ingredients:

Base:

  • 75g almond meal
  • 50g chocolate, melted
  • 2 tbsp maple syrup
  • 2 tbsp plant-based milk
  • 1 tbsp black chia seeds

Filling:

  • 250g raw cashews
  • 150g raspberries + extra for serving
  • 100g plant-based yogurt
  • 85g maple syrup
  • 75g coconut oil or plant-based white chocolate
  • 1 lemon, juice and zest
  • 1 tbsp vanilla extract
  • 50g black chia seeds

Instructions:

  1. Use a 15 cm spring-form cake tin for your berry chia cheesecake and line its bottom.
  2. After mixing all the base ingredients together, press them into the bottom of your cake tin.
  3. Put all the filling ingredients, apart from the chia seeds, in a blender and pulse until smooth.
  4. Add the chia seeds to the filling, and pour them into the cake tin after stirring the mixture properly. Place the cheesecake in the fridge and leave it there for at least four hours.
  5. Once the cake is set, carefully remove the tin, and decorate it with extra raspberries before serving.

Lamington cheesecake is literally perfection! Anyone obsessed with cheesecake has to try it.

Ingredients:

  • 3 teaspoons water
  • 1/2 cup caster sugar
  • 250 g white chocolate
  • 1/2 cup thickened cream
  • 18 lamingtons
  • 250 g mascarpone
  • 300 ml thickened cream
  • 250 g dark chocolate
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut
  • 2 teaspoons gelatine powder
  • 125 g cream cheese

Instructions:

  1. Prepare a 17×27 cm pan before you start making the lamington cheesecake.
  2. Place the lamingtons on the bottom of the pan.
  3. Grab a heatproof bowl and add the white chocolate with 150 ml cream. Start melting it in the microwave in short intervals.
  4. In a second bowl combine the water and gelatine. Place the bowl in the microwave for 20 seconds. Combine the gelatin with the melted chocolate.
  5. Beat together the sugar, mascarpone, cream cheese, vanilla. Combine it together with the chocolate mix.
  6. Get another bowl and beat the rest of the cream cheese to get soft peaks. Add it in the mix.
  7. Pour the mixture on top of the lamingtons. Leave the pan in the fridge for at least 8 hours.
  8. Next, melt the extra thickened cream with the dark chocolate. Leave the mix in the fridge for 20 minutes.
  9. Add it on top of the cheesecake and finish off with the shredded coconut.

Ingredients:

To make these tasty keto cheesecake fat bombs you’ll need:

2 ounces salted butter
6 ounces cream cheese
1 teaspoon vanilla extract
1 ounce granular sweetener
2-2.5 ounces fresh or frozen strawberries*

* When it comes to the choice of fruit, you can always go for raspberries, blackberries, bananas, or whatever else that you prefer. Feel free to experiment with tastes.

How To Make It:

The keto fat bombs will only take you 10 minutes. First put the frozen fruit, cream cheese, and butter on room temperature for them to become soft.

During the second step, you will need to place the berries in a blender and get a smooth mixture. Grab a bowl and fill it with the vanilla extract, strawberry puree, and the sweetener. Mix very well.

Put the cream cheese in a microwave for around 10 seconds.

Add the butter and the cream cheese to the other bowl with the strawberry mix. You can mix everything by hand or grab an electric mixer.

Place the fat bombs in the freezer for several hours.
