Brussels sprouts are a delicious and nutritious vegetable. The key to preparing them is to not overcook the Brussels sprouts so that they don’t become mushy and lose their flavor. Here’s a foolproof recipe you’ll be sure to enjoy.

Ingredients:

  • 1 package of fresh brussels sprouts
  • 2 tablespoons of olive oil
  • 1/3 cup of water
  • Salt to taste
  • ½ lemon
  • 1 tablespoon of butter (optional)

Instructions:

  • Remove the Brussels sprouts from the stem. 
  • Cut each Brussels sprout in half and place face down in a cold pan covered in olive oil. Turn the heat to medium-high heat and add salt to taste. 
  • Cook the Brussels sprouts until the bottoms start to get brown (about 2 minutes). Once the Brussels sprouts are browned, add 1/3 cup of water and cover the pan with a lid. Cook the covered Brussels for another 4 minutes in boiling water. After that, remove the lid and continue cooking until all the water evaporates. 
  • Once you’re done, add the juice of half a lemon. For an extra touch, you can add a tablespoon of butter. Enjoy! You can store them in the refrigerator for up to four days.

Are you a Brussels sprouts fan? I wasn't until 6 or 7 years ago…now I ABSOLUTELY love them and eat them many times each week! Note: There are many high quality bacon options available these days. Look for nitrate free, and humanly raised if possible. We eat bacon a few times each month at our house because it's something we (REALLY) enjoy! makes 10-12 snack size servings Ingredients: 1 lb. Brussels sprouts (choose larger ones if possible) 12 oz. thin sliced nitrate free bacon 2 tsps sea salt Instructions: Wash the Brussels sprouts under cold running water, trim the ends and remove any yellow leaves. Bring a pot of water to a boil over medium-high heat. Add salt, and wait a few minutes for the water to boil. Carefully add in the sprouts and boil for 3-4 minutes or until just tender and bright green. Once the sprouts are done, remove from the heat and drain well. Allow them to cool until easy to handle. Preheat your oven to 400 degrees f. Then line a baking sheet with parchment paper or a silicone mat. Place a Brussels sprout at the top of a piece of bacon and roll up around so that it evenly wraps the sprout, depending on the size of your sprouts, you may want to only use half a slice of bacon for each. Repeat until finished with all the sprouts and bacon, then place them on the prepared baking sheet, with the seam side down. Bake for 15-20 minutes until bacon is golden crisp. Remove from the oven and place on a paper towel lined plate, to drain any excess grease. Serve immediately and enjoy! You can store the wrapped-pieces in an air-tight container for up to 3 days and reheat just before serving. ❤Rachel

Here's how to make @itsalislagle's Crisp Gnocchi With Brussels Sprouts and Brown Butter:⁣ ⁣ ⁣Ingredients⁣ • 1 pound brussels sprouts (or cruciferous vegetables like broccoli, cauliflower or even cabbage)⁣ • 1 lemon⁣ • ¼ cup extra-virgin olive oil⁣ • Kosher salt and black pepper⁣ • ½ teaspoon red-pepper flakes⁣ • 1 (18-ounce) package shelf-stable or refrigerated potato gnocchi⁣ • 6 tablespoons unsalted butter, sliced into 6 pieces⁣ • ½ teaspoon honey⁣ • Freshly grated Parmesan, for serving⁣ ⁣ Step 1: Trim and halve the brussels sprouts. Do you ever CRAVE vegetables? 🥬🤩 . I always wondered how so many of my patients could feel totally “fine” going days on end without eating a vegetable. I’m talking, not even a slice of tomato or lettuce on a sandwich. If I go a few days without some leafy greens or even just a tiny pop of color on my plate my body is FEELING it. I usually feel less energized, haven’t had a proper 💩, and don’t feel as satisfied at meals. Instructions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Meanwhile, whisk together 1/4 cup olive oil, honey, garlic, goat cheese, parmesan, lemon juice, vinegar, and salt and pepper until a smooth, creamy dressing is formed.
  3. Arrange Brussels sprouts and apples on a sheet pan and drizzle with remaining olive oil, salt, and pepper. Bake for 20 minutes or until Brussels sprouts are crispy and apples are tender and caramelized.
  4. Combine kale, almonds, Brussels sprouts, and apples into a large bowl and toss it with the vinaigrette.

This salad can be served immediately or chill in the refrigerator for 1 hour to allow the kale to soften and marinate in the dressing.

. #Brownrice and #shrimp bowl 🍜 . . وی از وضعیت غذا خوردنش به شدت ناراضی بود و بعد از صد سال واسه خودش غذای سالم پخت بالاخره ! . . #میگو هارو با دو قاشق رب انار ترش ، نمک ، فلفل سیاه ، پودر سیر ، آویشن ، پودر رزماری و یک قاشق آبلیمو مخلوط کردم و با یدونه برگ‌بو چند ساعتی گذاشتم‌ توی یخچال ( از دیشب در واقع ) . برای پخت دو قاشق روغن زیتون ریختم توی تابه ی گرم شده و و میگو ها رو دونه دونه انداختم‌توش و ۷ – ۸ دقیقه تفت دادم . میگو ها که پختن حرارت رو زیاد کردم و آب باقیمونده ته ظرفی که میگو هارو توش مزه دار کرده بودم رو هم اضافه کردم ، یک دو دقیقه که جوشید یه سس کاراملیه باحالی شد . . برای پخت برنج قهوه ای هم مثل برنج معمولی از قبل گذاشتم خیس بخوره ، یک پیمونه برنج رو با یک پیمونه نخود فرنگی ، یدونه گوجه فرنگیِ نگینی خرد شده و یکم نمک و دو تا لیوان آب جوش و یک قاشق روغن زیتون گذاشتم روی حرارت تا بجوشه و برنج نرم بشه ( برنج قهوه ای نسبت به برنج سفید دیرتر میپزه ، تو این مرحله اگه همه ی آب بخار شد ولی هنوز برنج سفت بود باز هم بهش آب اضافه کنین ) و گذاشتم دم بکشه . . . دوست هنرمند @mahmoodi.farnaz

Winter is here, and it might seem like one of the toughest times of the year to find fresh vegetables for your kitchen. The cold weather slows down harvests, making it sometimes hard to find in-season vegetables to eat and include in recipes.

Don’t fear, however. There are some vegetables that do especially well during the coldest months of the year and are in season. Check out these fresh, in-season veggie options for this time of the year.

Brussels Sprouts

Brussels sprouts are a vegetable to rely on during the wintertime. These small green beauties, which we love roasted in the oven with a balsamic glaze, are in-season and widely available during the winter season.

Radishes

Radishes are a versatile vegetable which is also at its best during the winter. There are a number of uses for this red, crunchy root vegetable, including as a roasted side dish or as an addition to a colorful salad.

Carrots

That’s right! Carrots are totally in season during the winter, meaning that you should stock up and take full advantage of them at this time of year. Healthy and incredibly versatile, you can eat also eat these veggies raw as a tasty snack.

If you think salad isn’t a comfort food, you need to make this delicious fall kale salad. Filled with crunchy almonds, roasted apples, Brussels sprouts, and a lemony goat cheese vinaigrette, you’ll be craving this salad all season long.

Ingredients:

  • 1 cup almonds, roughly chopped
  • 1 pound Tuscan kale, roughly chopped
  • 3/4 pound Brussels sprouts, sliced
  • 1 apple, sliced
  • 1/2 cup olive oil
  • 1 tablespoon honey
  • 1/4 cup grated Parmesan
  • Juice of 1 lemon
  • 2 teaspoons balsamic vinegar
  • 1 garlic clove, grated
  • 4 ounces soft goat cheese
  • Salt and pepper

Do you ever CRAVE vegetables? 🥬🤩 . I always wondered how so many of my patients could feel totally “fine” going days on end without eating a vegetable. I’m talking, not even a slice of tomato or lettuce on a sandwich. If I go a few days without some leafy greens or even just a tiny pop of color on my plate my body is FEELING it. I usually feel less energized, haven’t had a proper 💩, and don’t feel as satisfied at meals. If I spend a few days eating out or I’m enjoying new foods on vacation my body will soon speak up, LOUDLY that it needs veggies. 🙋‍♀️ . What I’ve come to understand is that for so many people, when having daily veggies isn’t part of the routine, they don’t actually KNOW what it feels like to have that added boost of fiber and nutrients. Their body hasn’t yet learned to feel truly GREAT and crave vegetables more often. It’s not your fault, and nobody is a “bad” person for this, it’s just the habit you’ve gotten into! . We all know veggies are healthy, but until we start to include more of them, and in truly DELICIOUS ways, we won’t get that craving or understand our body’s signal to fill up on a plate of greens! . My body was DEFINITELY speaking up for veggies this week, so this fun fall kale salad has been on repeat for lunch. No chewy kale here 🙅‍♀️, this salad is massaged with olive oil and tahini and loaded up with chickpeas, wild rice, toasted walnuts, and grapes (plus some feta that I added on later). . Instructions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Meanwhile, whisk together 1/4 cup olive oil, honey, garlic, goat cheese, parmesan, lemon juice, vinegar, and salt and pepper until a smooth, creamy dressing is formed.
  3. Arrange Brussels sprouts and apples on a sheet pan and drizzle with remaining olive oil, salt, and pepper. Bake for 20 minutes or until Brussels sprouts are crispy and apples are tender and caramelized.
  4. Combine kale, almonds, Brussels sprouts, and apples into a large bowl and toss it with the vinaigrette.

This salad can be served immediately or chill in the refrigerator for 1 hour to allow the kale to soften and marinate in the dressing.

. #Brownrice and #shrimp bowl 🍜 . . وی از وضعیت غذا خوردنش به شدت ناراضی بود و بعد از صد سال واسه خودش غذای سالم پخت بالاخره ! . . #میگو هارو با دو قاشق رب انار ترش ، نمک ، فلفل سیاه ، پودر سیر ، آویشن ، پودر رزماری و یک قاشق آبلیمو مخلوط کردم و با یدونه برگ‌بو چند ساعتی گذاشتم‌ توی یخچال ( از دیشب در واقع ) . برای پخت دو قاشق روغن زیتون ریختم توی تابه ی گرم شده و و میگو ها رو دونه دونه انداختم‌توش و ۷ – ۸ دقیقه تفت دادم . میگو ها که پختن حرارت رو زیاد کردم و آب باقیمونده ته ظرفی که میگو هارو توش مزه دار کرده بودم رو هم اضافه کردم ، یک دو دقیقه که جوشید یه سس کاراملیه باحالی شد . . برای پخت برنج قهوه ای هم مثل برنج معمولی از قبل گذاشتم خیس بخوره ، یک پیمونه برنج رو با یک پیمونه نخود فرنگی ، یدونه گوجه فرنگیِ نگینی خرد شده و یکم نمک و دو تا لیوان آب جوش و یک قاشق روغن زیتون گذاشتم روی حرارت تا بجوشه و برنج نرم بشه ( برنج قهوه ای نسبت به برنج سفید دیرتر میپزه ، تو این مرحله اگه همه ی آب بخار شد ولی هنوز برنج سفت بود باز هم بهش آب اضافه کنین ) و گذاشتم دم بکشه . . . دوست هنرمند @mahmoodi.farnaz
