Vegetable broth is such an important ingredient to have in your kitchen at all times; not only can you whip up any kind of soup in no time, you can also use it for sauces, rice, and more. The easiest and healthiest way to use veggie broth is by using homemade, which is super simple to make. Follow these steps and you will be surprised how you can turn your scraps of vegetables in golden magic.

Ingredients

The best part of this broth is that you can use whatever you have in your fridge. The best thing to do is when a veggie is starting to wilt, throw it in a freezer safe bag and wait until it’s full to make the broth. You can really use whatever vegetables and herbs you have, including stems, skins, and seeds.

Method

  1. Once you have collected a bag of veggie scraps or wilted veggies throw them in a pot.
  2. When they have defrosted, pour in some tomato paste
  3. Cover with water and wait until it has come to a boil, and then bring it back down to a simmer.
  4. Depending on how strong you want it to be will determine cooking time.
  5. Strain, pour into ice cube molds to set, pop them out and into a freezer bag and use as many as you want whenever you want!
