Fried Chicken With Corn Flake Crust

Recently, we went out to dinner and had the most amazing fried chicken, but instead of panko, which is typically used, corn flakes were used for the crust instead. Which got us thinking, why can’t we create this dish at home, and that’s exactly what we did. This oven-baked fried chicken is coated in seasoned crushed cornflakes, which gives it the crunch we love. Here’s how to make it.

Ingredients:

  • 3 1/2 pounds chicken parts
  • 2 teaspoons salt (plus more for seasoning the chicken)
  • 1/2 teaspoon ground black pepper (plus more for seasoning the chicken)
  • 2 large eggs
  • 1/4 cup milk
  • 2 1/2 cups crushed corn flakes

Instructions:

  1. Preheat the oven to 350 F and lightly oil a baking sheet.
  2. Salt and pepper the chicken to taste. Set the chicken aside.
  3. In a shallow bowl, whisk together the eggs and milk, and set aside.
  4. In another shallow bowl, combine the corn flakes with 2 teaspoons of salt and 1/2 teaspoon of ground black pepper. Set aside the coating.
  5. Dip the chicken in the egg mixture and coat it with the corn flake mixture. Make sure you pat the mixture so the crumbs stick to the chicken.
  6. Arrange the chicken skin side up on the baking sheet.
  7. Bake until the chicken is golden and crisp, about 45 to 60 minutes.
