We may be heading towards the last stretch of summer, but you can bet that you’ll still find us lounging by the pool, drink in hand. Our cocktail of choice? This watermelon mojito that we’ll be making long after summer has gone.

Ingredients:

  • 2 thick slices fresh watermelon
  • 6 ounces light rum
  • ¼ cup simple syrup
  • 3 limes, juiced
  • 15 fresh mint leaves, coarsely torn by hand

Instructions:

  1. Cut the watermelon into cubes and place in a food processor. Purée until smooth.
  2. Use a mortar and pestle to mash the mint leaves and put them in a pitcher.
  3. Add the puréed watermelon, rum, syrup, and lime juice.
  4. Serve over ice and garnish with extra mint leaves.
