Hearnden starts by boiling two tins of condensed milk for three hours and then leaving them to cool off in order to create caramel. Alternatively, you can combine condensed milk with butter and brown sugar in a saucepan and stir on low heat until the ingredients combine.
Next, you need to make a crust for your banoffee pie. Place 1 pound of digestive cookies (or Graham crackers) in a food processor and blend until you achieve “sand consistency.” Combine with 7 ounces of melted butter and place in a tart pan while pressing at the bottom and against the edges until you get a flat surface. Chill for one to two hours.
After your base is chilled, pour in the caramel on it and spread evenly. Slice four bananas and layer them on the caramel. Top with whipped cream and sprinkle with grated chocolate.
You can leave the banoffee pie for a few hours in the fridge to completely set or dig in immediately. It is up to you.
