Bangkok-based foodie and adventurer Mark Wiens believes in the power of a good meal.

“I believe when you travel, there’s no better way to connect with people, than through food,” he explained on his website. “No matter what culture or country you’re from, or wherever you choose to travel, the one thing you and I have in common is that food is a huge part of our lives.”

Wiens knows what he’s talking about. Originally from the US, Wiens was raised in central Africa before returning to the US for his studies. But after graduating with a degree in Global Studies, he found himself hungry for more. His journey began with one-way ticket to Southeast Asia and ended in Thailand.

Now based in Bangkok, Wiens has risen to celebrity status, thanks to his candid reviews and vlogs focusing mainly on Thai food and more generally—spicy food. With some 7 million subscribers on YouTube, as well as more than 1.2 million followers on Instagram, people are clearly taking note.

“At first, I started making extremely simple street food videos, and I really had no idea what I was doing,” admits Wiens. “Years down the road, making food videos on YouTube is one of the main things I do.”

His passion for all things spicy is a treat for foodies around the world. You’d want to join in the hype!

Ingredients

Pad thai is easy if you have the right ingredients!

  • 3 tablespoons of fish sauce 
  • 1  tablespoon of soy sauce
  • 5  tablespoons of light brown sugar
  • 2  tablespoons of rice vinegar 
  • 1  tablespoon of sriracha 
  • 2  tablespoons of peanut butter
  • 8 oz of flat rice noodles
  • 3  tablespoons of oil 
  • 3 cloves of minced garlic
  • 8 oz of tofu or the protein of your choice
  • 2 eggs
  • 1 cup of bean sprouts
  • 1 red bell pepper
  • 3 scallions
  • 1/2 cup of peanuts
  • 2 limes

Recipe

  1. Mix together the fish sauce, soy sauce, brown sugar, rice vinegar, sriracha, and peanut butter together in a medium bowl. Leave it to the side. 
  2. Cook the rice noodles according to the package directions, drain and rinse under cold water. 
  3. Heat up some oil in a skillet. Thinly slice the bell pepper and add them to the skillet with whatever protein you are cooking. 
  4. Cook the protein almost all the way through, and then add the garlic at the end to cook for another 30-60 seconds. 
  5. Move everything over to one side of the pan, add a little more oil, beat the eggs, and pour them into the skillet. 
  6. Once the eggs have cooked, mix them with the other ingredients in the skillet, and then add in the noodles, some of the peanuts, sauce, and bean sprouts. 
  7. Toss to coat in the sauce, and then serve with more peanuts on top, sliced scallions, and lime juice!
