Mushrooms are one of the most popular plant-based meat alternatives thanks to their incredible versatility. The list of dishes you can make with them is pretty much endless, and stuffed mushrooms fall under that category. If yours aren’t as delicious as you want them to be, these useful tips will help you improve your go-to recipe.

Excess Moisture

One of the biggest issues you’ll have to deal with when preparing mushrooms is the water they release along the way. You can try avoiding this problem by gently scrubbing your mushroom instead of washing them, and roasting them before putting the stuffing in to give the water enough time to evaporate.

Don’t Ditch Stems

Many people tend to throw away their mushroom stems after removing them, but that’s a huge waste. They can be pretty tasty when used for the stuffing, so chop them up and mix them with all the other ingredients.

Right Variety

Mushrooms come in many shapes and forms, but you can’t just use any of them to make stuffed mushrooms. The stuffing won’t fit if your mushrooms are too small, and that’s why you should always go with large mushrooms with cupped shapes, such as cremini and white button mushrooms.

Pizza comes in many shapes and sizes, and if you’re in the mood to put a fun twist on this popular Italian dish, we’ve got the best recipe you could possibly ask for.

Rachel Maser, behind the popular food blog Clean Food Crush, shared her own take on stuffed mushrooms with a million of her followers, and it’s surprisingly easy to make. If you’re a huge fan of pizza, but prefer it in smaller doses, this is a recipe just for you.

Maser’s recipe features mozzarella and pepperoni slices, but if you prefer some other pizza toppings feel free to get creative when trying this recipe on your own.

Ingredients (3-4 servings):

  • 7 medium-large mushroom caps, stems removed
  • 1/2 cup low sugar marinara sauce
  • 1/2 tsp each; garlic powder, dry Italian seasoning, and sea salt
  • 1/2 cup shredded high-quality mozzarella
  • nitrate-free pepperoni slices
  • fresh chopped parsley or basil leaves

Instructions:

  1. Preheat oven to 375 degrees f.
  2. In a large oven-proof cast iron or flat rimmed sheet pan, lay out mushrooms upside down as shown.
  3. Fill each mushroom cap with about a Tablespoon of marinara, and sprinkle it with mozzarella.
  4. Top each with pepperoni if desired, and bake until cheese is melty, for about 15 to 20 minutes.
  5. Sprinkle with fresh chopped parsley or basil.
