Everyone loves a good spread. They are great for snacking when paired with toast or a slice of sourdough bread, but can also work well as ingredients in other dishes.

One of the spreads we can’t get enough of lately is tapenade. This popular French spread, made with olives, capers, and anchovies, is not only delicious but also doesn’t require you to go to the grocery store, as you can make it at home. Here’s how.

Ingredients:

  • ½ cup pitted black olives
  • ¼ cup pitted green olives
  • 1 anchovy fillet
  • 2 tablespoons capers
  • 4 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 3 cloves garlic

Instructions:

  1. Rinse the black olives and green olives under cold water and drain. Put in a blender.
  2. Add the remaining ingredients and blend until you get a smooth paste-like consistency.
  3. Stop the blender from time to time in order to scrape the ingredients that were stuck on the side.
  4. Spread on bread, use it as a dip or add to pasta dishes.
  5. Place the remainder of the tapenade in a container with a lid and store it in the fridge. It will remain good for about two weeks.

Have you heard of ajvar? If you like red peppers, chances are you’re going to love this unique dish that’s popular in Serbia, Macedonia, Bosnia, and many other countries. Ajvar (pronounced eye-var) is made with roasted red peppers, typically prepared during the pepper season in September.

Taste

Ajvar is often compared to caviar for a good reason. They both taste luxurious and amazing. Ajvar is one of the things the Balkan is the proudest of. Some recipes call for a bit of tomato or roast eggplant, but most use nothing but red pepper and oil. It goes great with numerous savory dishes and makes a perfect sandwich spread.

Preparation

Once September comes, the air in many Balkan towns and villages gets filled with the smell of roasted pepper. People roast the peppers over direct flame until their skins char. Once they cool down, the peppers are peeled and seeded, then milled. The milled peppers go in a big pot where they are mixed with some oil and salt. Once cooked, ajvar is stored in jars and used throughout the year.

Although homemade is best, you can easily buy ajvar in stores around the world. If you have a chance, get a few jars of homemade ajvar from the experienced cooks and you’ll never look back!
