There’s something wonderfully comforting about a warm, freshly baked scone, especially when it’s loaded with juicy blueberries and has a hint of lemon zest. Not only are these scones delicious, but they’re also surprisingly easy to make. Let’s jump in!

Ingredients:

  • 2 cups all-purpose flour
  • 1/3 cup sugar, plus extra for sprinkling
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 cup fresh blueberries
  • Grated zest of 1 lemon
  • 1 cup heavy cream

Instructions:

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, 1/3 cup of sugar, baking powder, and salt. 
  3. Add the chilled, cubed butter to the dry ingredients. Using a pastry blender or your fingertips, cut the butter into the mixture until it resembles coarse crumbs. 
  4. Gently fold in the fresh blueberries and grated lemon zest.
  5. Pour in 1 cup of heavy cream and stir just until the dough comes together. 
  6. Turn the dough out onto a lightly floured surface. Pat it into a round disc about 1 inch thick. Cut the dough into 8 wedges.
  7. Place the scones on the prepared baking sheet.
  8. Bake for 20-25 minutes, or until the scones are golden brown.
