You know that moment when guests are going to be at your door any minute, and you still haven’t prepared a salad for your dinner party? You need something that looks amazing and tastes delicious at the same time, but you only have some leftover tomatoes and mozzarella in your fridge? Luckily, that’s pretty much all you need to make Caprese salad!

This refreshing and tasty salad is often served as an appetizer or a side dish in Italy. In addition to tomatoes and mozzarella, it always features fresh basil leaves, and the colors of its ingredients are meant to represent the colors of the Italian flag. You can make it in five minutes or less and the process is incredibly simple.

Ingredients (serves 4)

  • 10 fresh basil leaves
  • 400 g of tomatoes
  • 300 g mozzarella cheese
  • olive oil
  • balsamic vinegar
  • salt and pepper

Instructions

  1. Cut the mozzarella into thick slices and do the same with the tomatoes after washing them.
  2. Arrange mozzarella and tomato slices on a platter, altering them with each other.
  3. Garnish the salad by tucking the fresh basil leaves between mozzarella and tomato slices.
  4. Drizzle the salad with olive oil and balsamic vinegar, and season it with salt and pepper.

  • 2 ripe tomatoes, medium-sized
  • 1 large cucumber
  • 1 small red onion
  • 2 tablespoons olive oil
  • ¼ cup red wine vinegar
  • 2 teaspoons salt
  • 2 teaspoons black pepper

Instructions

  • The first thing you’ll want to do is cut the tomatoes and cucumber into small, bite-sized pieces. Once you’re done with this step, place them into a large bowl.
  • Next, go ahead and slice the red onion into thin, almost transparent slices and add to the bowl along with the tomatoes and cucumber.
