These no-bake pumpkin spice balls are the ideal autumn treat. They’re easy to make, packed with fall flavors, and perfect for snacking or entertaining. Plus, you can easily customize to fit any dietary needs.

Ingredients:

  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut flour
  • 2 tablespoons almond butter
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped pecans or walnuts (optional)
  • 1/4 cup powdered sugar or coconut sugar (for rolling)

Instructions:

  1. In a large bowl, mix together the pumpkin puree, almond butter, maple syrup, and vanilla extract until smooth.
  2. In a separate bowl, combine the almond flour, coconut flour, pumpkin pie spice, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms. If the mixture is too wet, add more coconut flour, one tablespoon at a time.
  4. If using, fold in the chopped nuts.
  5. Refrigerate the dough for about 30 minutes to make it easier to handle.
  6. Roll the chilled dough into 1-inch balls.
  7. Place the powdered sugar or coconut sugar in a shallow bowl. Roll each ball in the sugar to coat.
