Ingredients (to serve 4):

  • 6 pears
  • 3 pieces of stem ginger, plus one tablespoon of syrup from the jar
  • 1/2 cup of red wine
  • 1 teaspoon of cinnamon
  • 1 teaspoon of ground ginger
  • 1/2 cup of water
  • 1/2 cup of caster sugar
  • 1 teaspoon of ground nutmeg
  • Cream, to serve

Instructions:

  1. Slice the pears in half horizontally, and slice the stem ginger into strips.
  2. Heat the wine, water, cinnamon, and sugar in a pan. Once it’s steaming, carefully lower the pears and ginger into the liquid.
  3. Simmer for 10-15 minutes, then stir in the ground ginger. Cook for a further 2 minutes, then remove from the heat.
  4. Gently heat the cream in a pan, and stir in the nutmeg once it’s heated through. Remove from the heat and serve alongside the pears.

This classic elegant dessert is a real crowd-pleaser, and can be ready in under half an hour. It can also be made ahead in advance and heated when you’re ready to serve.
