There are so many possible variations on this simple and satisfying meal, and this recipe takes inspiration from the classic Italian caprese salad. This fresh salad is the perfect blend of summery tastes, with sweet tomatoes pairing well with creamy mozzarella and fresh basil. Adding pasta into the mix makes this a well-balanced meal that will work well in any setting. This recipe serves 4.

Ingredients:

  • Pasta for 4
  • 2 cups cherry tomatoes
  • 8 ounces mozzarella
  • 1 cup fresh basil leaves
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste

Instructions:
