Ingredients:

1 pound orzo
1 pound broccoli
1 medium onion
2 cups shredded cheddar
3 tablespoons unsalted butter
3 cloves garlic
3/4 cup whole milk
4 cups vegetable broth
Kosher salt
black pepper
sliced chives

Instructions:

Put the onion into a large skillet over medium heat and season with salt and pepper. Cook for about seven minutes until softened.
Add broccoli to the skillet and cook for 3 to 5 minutes, until bright green.
Stir in the garlic and cook for another minute.
Add the orzo to the mix, cooking for another minute.
Raise the heat to high and stir in the broth, seasoning the mixture with salt. Lower the heat to medium-low.
Allow to simmer for another 7 minutes, and stir in the milk before returning the mixture to a simmer.
Remove from the heat and stir in the cheddar. Let sit for another 5 minutes until the cheddar is melted in. Stir again and sprinkle in the chives.
