New Orleans has always been influenced by its French roots, and in the Po’Boy, that influence is clear with the use of French bread for the bun of the sandwich. Light and crispy, this bread gives a bit of airiness to an otherwise heavy sandwich and provides delightful crunchiness.
The filling of a Po’Boy isn’t always the same, but it always consists of a meat or seafood along with vegetables.
Many Po’Boys these days are made with fried shrimp or other fried seafood. This is due to New Orleans’ proximity to the Gulf of Mexico and the availability of options like shrimp, oysters, mussels, and fish.
Traditionally, however, meat has also been used for Po’Boys. You can also find roast beef Po’Boys as well as fried chicken, lamb, and Louisiana hot sausage-based sandwiches. These sandwiches, no matter what the meat or seafood, are typically “dressed” with lettuce, tomato, pickles, and mayonnaise.
