Mimosas are a brunch staple. As the weather gets colder, and fall comes in at full swing, it’s time to put a fall twist on the classic citrus cocktail.

To make your mimosas more seasonally appropriate, try apple cider mimosas. The rich taste of fall comes through ever sip of this cocktail, which even has a cinnamon-sugar rim—Yum!

Here’s how to make apple cider mimosas.

Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon ground cinnamon
  • 1 cup apple cider
  • 1 bottle bubbly

Instructions

  1. Combine sugar and cinnamon on a small plate and dip champagne flutes in water to wet the rims before dipping them into the cinnamon-sugar mixture.
  2. Fill four champagne flutes 1/4 full with apple cider then top with champagne.

Mimosas are bubbly cocktails made with sparkling wine and orange juice and they’re a light, refreshing drink perfect for brunch. To get the best mimosa it’s all in the details. While many people use Champagne, you don’t actually need expensive alcohol; Cava or Prosecco work just as well. For orange juice, you’ll want to work with a fresh, pulp-free orange juice, not one from concentrate.

The ratio of sparkling wine to orange juice is up to you, but we suggest starting with a 50/50 ratio and then making adjustments from there. Other tips include keeping the ingredients chilled and to pour in the sparkling wine before the orange juice. In regards to the glass, it’s best to use Champagne flutes and when you pour the wine in to hold the glass at a slight angle. You don’t need to stir your mimosas as pouring the liquids will mix them and stirring them will release bubbles.

If you want a variation of mimosa, switch out the orange juice for cranberry juice, grapefruit juice, peach puree, pineapple juice, pear nectar, pomegranate juice, apple cider, or watermelon juice.

Mimosa bars are a great idea if you’re hosting a party as they’re so easy to make and guests can combine chilled sparkling wine and juice in their own glasses, so they can make the cocktail the way they like. Or if you want to do the work ahead of time, you can pre-mix mimosas into pitchers and combine equal parts wine and juice.
