Carrot cake is an amazing food invention. Using sweet, moist carrots to add texture and flavor to a cake is a winning choice, and in this recipe, the addition of fresh ginger gives the cake an even more exciting flavor profile and an extra level of deliciousness. This recipe serves 12.

Ingredients:

  • 2 cups plain flour
  • 1 teaspoon baking powder
  • 1 cup brown sugar
  • 5 ounces salted butter, at room temperature
  • 2 large eggs
  • 3 large carrots
  • 3 inch piece of ginger
  • 1 cup cream cheese
  • 1/2 teaspoon vanilla extract
  • 1/2 cup walnut pieces

Instructions:

  1. Preheat the oven to 350℉
  2. Chop the ends off the carrots and peel the ginger. Grate them both.
  3. Sift the flour and baking powder into a large mixing bowl.
  4. Add the sugar and 4 ounces of the butter and beat together until smooth.
  5. Crack the eggs into the bowl and whisk them into the mixture.
  6. Add the grated carrot and ginger and mix throughout.
  7. Take two matching round cake tins and line them with greaseproof paper.
  8. Transfer half of the mixture into each cake tin. Place in the oven for 25 minutes.
  9. Check the cakes are cooked by sticking a knife into the middle of each one and checking it comes out clean.
  10. Once cooked, transfer to a cooling rack and leave for at least 15 minutes before frosting.
  11. Meanwhile, make the frosting by beating together the cream cheese and remaining butter. Once smooth, stir through the vanilla extract.
  12. When the cakes are cool, use frosting to stick one on top of the other. Then cover the top and outside with the remaining frosting, and garnish with the walnut pieces.

Strawberry Tom Collins

Crush 4 strawberries and mix with 2 teaspoons sugar, 10ml lemon juice, 25ml gin, 20ml strawberry liqueur, 75ml soda water and crushed ice in a cocktail shaker. Shake and serve over crushed ice in a tall tumbler.

Grapefruit and Mint Mojito

Toss some mint leaves into a tumbler. Add 1/2 teaspoon sugar and 1/2 juice of a lime. Swirl the drink until the sugar has dissolved. Add ice, 50ml gin, juice of 1/2 grapefruit and 15ml Cointreau. Top the mix off with soda water and swirl it round with a straw. Garnish with a mint leaf—and voila!

Blood Orange and Elderflower

Combine 25ml gin, 80ml St Germaine Squeeze lime and 70ml Ginger Ale in a chilled glass. Top with ice, and then slowly pour in 25ml blood orange juice. Garnish your cocktail with slices of blood orange and fresh lemon thyme sprigs. Serve straight away for a refreshingly fine finish.

Ginger cake is warm, yummy, and just the sort of treat you want to bite into with a cup of hot cocoa or a glass of mulled wine this winter!

Ingredients:

  • 4 oz of ginger
  • 1 cup of molasses
  • 1 cup of white sugar
  • 1 cup of vegetable oil
  • 2 1/2 cups of flour
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of cloves
  • 1/2 teaspoon of black pepper
  • 1 cup of water
  • 2 teaspoons of baking soda
  • 2 room temperature eggs

Instructions:

  1. Start by peeling the ginger and either grating it or finely mincing.
  2. Mix the molasses, sugar, and oil in a large bowl until they’re well incorporated.
  3. In a medium-sized bowl, sift the flour, cinnamon, cloves, and black pepper. Whisk further to incorporate.
  4. Pour the water into a small pot and bring it to a boil. Once boiled, stir in the baking soda, turn the heat off, and pour this into the molasses bowl and mix. Add the ginger too.
  5. Slowly whisk the dry ingredients into the wet ingredients, and then the eggs one at a time.
  6. Pour the batter into a parchment-lined cake pan and bake at 350 F for 50-60 minutes or until a toothpick comes out clean.
  7. Let the cake cool for 30 minutes before removing for the pan and enjoy!
