There is no better way to start your day than with a stack of warm, moist, and delicious buttermilk pancakes. This recipe contains a simple trick of allowing the buttermilk time to work its magic, creating pancakes that are fluffier than ever.

Ingredients:

  • 2 cups all-purpose flour
  • 2 1/2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons kosher salt
  • 2 1/2 cups buttermilk
  • 2 eggs
  • 3 tablespoons melted butter
  • Oil or butter for the pan

Instructions:

  1. Mix flour, baking powder, baking soda, sugar, and salt together in a large bowl. 
  2. Make a well in the center and slowly pour in the buttermilk, melted butter, and cracked eggs.
  3. Starting in the center of the well, whisk everything together until well incorporated. Be careful not to over-beat (lumps are fine).
  4. Let the batter sit for 30 minutes to allow the mixture to thicken and create a fluffy texture.
  5. Melt butter or heat oil over medium heat in a large nonstick skillet. Using a measuring cup, ladle 1/3 batter at a time into the skillet. 
  6. Flip pancakes when edges start to become golden (about 3 minutes). Cook until other sides are lightly browned.
