]]>These chicken fajitas recipe requires 650 g boneless and skinless chicken thighs, 1/2-1 teaspoon ground chili, 2 tablespoons fresh squeezed lime juice, 1 teaspoon salt, 1 1/2 teaspoons ground cumin, 3 large bell peppers, 2 peeled and sliced avocados, 1 minced large garlic clove, 2 tablespoons oil, 1 tablespoon fresh chopped cilantro, 1 thinly sliced red onion.
Get a bowl and mix the garlic, salt, lime juice, oil, chili, cumin, and cilantro all together. You will use this mixture as a marinate for the chicken. Let the meat sit in the mix for around half an hour.
In a skillet you can start cooking the chicken. Set the stove on medium-high heat and use a little bit of oil. Cook the chicken to your preference. Once you’re done you can put it on a plate. In another skillet cook the onions and peppers together for a few minutes.
Add them in the plate as well and add the avocado as well. Decorate with some chopped cilantro. These are the easiest chicken fajitas ever.

]]>This recipe is really flexible because you can add whatever toppings you like to it. But, the base for this recipe are roasted chickpeas. Cover your chickpeas in olive oil, salt, and smokey paprika, and bake at 400 F for about 25 minutes until they are nice and crispy.
While the chickpeas are cooking you can saute some peppers, or simply chop up tomatoes, red onion, cucumbers, or whatever you have on hand. If you’re using fresh vegetables, mix them with a little vinegar and salt to make a nice crispy topping for the fajitas. To assemble, put the tortillas in a pan to crisp them up a bit or right onto a grill pan. Put down the sour cream if you want to use it, then the chickpeas, followed by the vegetables and top with cheese if you like or leave plain.
