1/2 large eggplant
1 tablespoon extra virgin olive oil
1/3 cup tomato sauce

The eggplant has to be sliced to round pieces to serve as a crust for the mini pizzas.
This mini eggplant pizza recipe will take you less than half an hour. First, preheat the oven at 350 F degrees.
Place the eggplant pieces on a baking pan and cover them with a little olive oil. Bake them for around 5 minutes.
This is when you flip them and add the Parmesan cheese. Put the pieces back in the oven and get them out again when the cheese is melted. It will take around 5 minutes.
