A lot of people are turned off by chicken, because it can be bland, dry, and generally disappointing. To make up for it, they often over-spice it or try to do too much. However, if you get some high-quality bone-in skin-on thighs, you can make some of the tastiest chicken with a cast iron pan and just 3 more ingredients.

Ingredients

  • Bone-in Skin-on Chicken Thighs
  • Olive Oil
  • Salt
  • Pepper

Instructions

  1. Pat chicken dry with a paper towel.
  2. Using a sharp knife, make two crosswise slits on the skin side of each thigh.
  3. Season chicken generously with salt and pepper.
  4. Heat olive oil in cast iron or stainless-steel pan on high heat.
  5. Once oil is smoking, add thighs to the pan, skin side down.
  6. Leave chicken undisturbed and allow to cook for 5-7 minutes, until skin is crispy and chicken can be lifted from pan without resistance.
  7. Flip chicken thighs over.
  8. Reduce heat to medium or medium low.
  9. Let chicken cook until internal temperature reaches 160 Fahrenheit.
  10. Remove chicken from pan, place on a plate and cover with foil for 5-10 minutes, until chicken reaches 165-170 Fahrenheit.
  11. Enjoy!
