Finding time to cook during the week can prove difficult between work and looking after the kids. Fortunately, there is a filling and scrumptious pasta recipe that takes less than an hour to prepare. Here is your guide to making a Spaghetti All’Assassina that will be perfect for weeknight dinners.

Ingredients:

  • 8 ounces spaghetti
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 2 cups chicken broth
  • 3 cups tomato puree
  • 4 cloves garlic
  • 5 tablespoons olive oil

Instructions:

  1. Heat a skillet of oil over medium heat. Add the garlic and red pepper flakes and cook for 2 to 3 minutes, until the garlic begins to soften. Add tomato paste and cook for 1 more minute.
  2. Pour the broth and the puree into a bowl. In the skillet, lay down the spaghetti and turn the heat to medium-high. Add 1 cup of broth and cook for 4 to 5 minutes, until there is a thickened paste around the spaghetti and at the bottom of the skillet.
  3. As the spaghetti begins to burn and stick to the skillet, use a spatula to lift it. Add another cup of broth and more salt to the pasta. Cook for another 25 to 30 minutes, until the pasta is al dente and the sauce is thickened.

If you’re making pasta, you may be creating something wonderful and amazing and throwing it out—or rather, pouring it down the drain—without even realizing. That’s right, pasta water is basically a golden elixir you should be saving at all costs. Here’s why.

Surprisingly Helpful

Pasta water is basically that starchy, cloud-y, salty water that is created when you cook pasta. And it’s worth its weight in gold. Well, it isn’t, but you really shouldn’t throw it out.

The best and most obvious use for pasta water is for stirring into your pasta sauce. This will make it cling better to the pasta and get the sauce all smooth and creamy, just like in a restaurant.

Practical Uses

But that’s not the only thing you can do with your pasta water. In addition to using it in pasta dishes, you can also use it for making homemade bread (it helps the bread rise), in soup recipes as a replacement for vegetable broth, and to cook beans in. Some even suggest to water your plants with it. So think twice next time you’re about to pick up that colander!

Cooking pasta comes naturally to some people, while others always end up frustrated because something’s not right. If your pasta turns out anything less than perfect, perhaps revisiting the basic cooking steps will help you see where you’re making a mistake. This is a foolproof guide that works every time.

  1. You’ll need four quarts of water for each pound of pasta or more if you have a big pot. This is important for preventing pasta from sticking.
  2. Adding a tablespoon of salt will provide great flavor.
  3. Let the water boil before adding the pasta. Never break it; instead, let it soften up and it will fit the pot comfortably.
  4. Stir once at the beginning and several more times throughout the cooking process.
  5. Your pasta packaging should tell you the approximate cooking time, but always taste it before removing from the heat.
  6. Drain, add sauce, and you’re done!

Surprisingly Helpful

Pasta water is basically that starchy, cloud-y, salty water that is created when you cook pasta. And it’s worth its weight in gold. Well, it isn’t, but you really shouldn’t throw it out.
