]]>Butternut squash is the perfect addition to risotto, as the sweet and mild flavor works well with the creamy rice, and the textures complement each other perfectly. Roast some butternut squash in the oven, and meanwhile cook the risotto rice. Once both are cooked, stir the butternut squash through the risotto with some spinach and crumbled feta.
Butternut squash soaks in the flavors of the curry and results in a delicious hearty meal. Fry the squash with some onion and carrot and plenty of spices. Add some canned chickpeas and then some chopped tomatoes and a can of coconut milk. Increase the heat and let this simmer for 20-30 minutes until the liquid has dissolved. Serve with rice and sprinkled cilantro.
This is a nice way to have butternut squash, and it requires less effort for chopping. Just chop in half lengthways and remove the seeds. No need to peel it. Cut slices in the flesh in a cross pattern, and then drizzle over some extra virgin olive oil. Sprinkle some salt, thyme, and oregano over, and place in the oven for 40-50 minutes, until the flesh is soft throughout.

Whether you prefer a sweet version with brown sugar or a savory version with parmesan cheese, you can’t go wrong here.
Butternut squash is another variety of the same family of gourds that surprisingly tastes pretty similar to pumpkin, although it’s a bit less sweet. This makes it great in soups and when baked in the oven with salty or savory ingredients like butter or cheese.

]]>You need to preheat the oven to 425°F in order to get the perfectly caramelized crust. While your oven heats, cut the squash into little cubes. Coat with olive oil and sprinkle with salt, pepper, and red pepper flakes if you like it spicy.
Next, place the squash over the baking sheet and make sure you don’t overcrowd it. Toss in the oven and let it roast for 40-50 minutes. You’ll know it’s done when you can easily pierce the squash with a fork.
That’s it – you now have perfectly roasted butternut squash that you can use as a side dish for various fall lunches and dinners!
