Eggs are one of the breakfast staples you can eat in many shapes and forms. Just when you think you’ve seen it all, you stumble upon a new recipe you haven’t tried ever before—and bell pepper eggs probably fall under this category.

Chances are you have used bell peppers in your omelets, but this recipe allows you to make them a part of your breakfast in a completely new way. You can bake them in a skillet together with your eggs, and the mixture of their flavors will make for a truly refreshing breakfast.

Ingredients (serves 1)

  • 2 eggs
  • 1 bell pepper
  • salt and pepper

Instructions

  1. While preheating the skillet over medium heat, wash and slice your bell pepper into rings.
  2. Place the pepper rings inside the heated skillet, and let them sauté for a minute or two. Flip the rings and break an egg into each ring.
  3. Let the peppers and eggs fry for three to four minutes until they achieve the desired doneness.
  4. Season them with salt and pepper, and eat while warm with a salad of your liking.
